You wouldn't think that some of the best Texan BBQ could be found at a food truck in Cody, Wyoming. I definitely didn't. After travelling throughout the South and trying various BBQ joints, I found this one to be astoundingly delicious. While passing through the town on our way to Yellowstone, we found Fat Racks; and I'm glad we made stopped. We got there minutes before opening, but Michael (the owner) was happy to greet us and assist us with any questions we had about the menu.
We got three of the brisket + pork rib variation of the two meat plates (that each come with a side you choose - we went with cole slaw, beans, and potato salad). The tender, yet not greasy brisket was amazing. It held its shape as you held it, but it easily came apart. I had the cole slaw, and it was enjoyable and fresh. The ribs bursted with flavor and did not need sauce because of the dry rub.
What really made the experience special was the conversation that we had with Michael. You could really tell that this humble man cared not only about his craft, but about the people he had the opportunity to share his food with. He asked us about our trip, gave us information / tips on how to spot wildlife and how to make the best of our time, and made us feel like close friends that simply haven't seen each other in a while. The fact that he took the time to step out of his truck while nobody was in line (we had a pretty early lunch) was a sweet gesture which added to the quality service that this place offers.
Fat Racks is a must eat if you're around the area. You won't regret checking out this BBQ joint at all. I definitely cannot wait to eat...

This place was right down the street from our hotel and appeared to be local, so we gave it a try. We each got a sandwich (pulled pork and brisket) as well as two drinks (bottled drinks from a fridge). The food came out relatively quickly, but in a brown paper bag even though we were dining in. The portions on the sandwiches were generous, but the meat was unremarkable. There was no great flavor and the barbecue sauce on the side was fine. For $30 between the two of us we were expecting more flavor (good spices, bark, etc.) and were really underwhelmed by what we received. The bread was cold/untoasted, and slightly mushed. I travel a lot. St Louis, Atlanta, Houston. When I go to the meat eater towns of America I go looking for ribs. The best places are simple, honest and so good I look forward to returning over and over.
Fat Racks is one of those places. Situated on an unassuming corner in Cody, Wyoming in a simple building that exudes the SMOKE of a good BBQ is a place I return to every trip.
The ribs are great. The pulled pork is so good. Get there early for brisket cuz they will run out (grrrrrrr). The cole slaw is fantastic. And I heard a rumor that the baked potato is 2 lbs of loaded goodness. Next time. Next time.
