I love birria tacos. I know, I'm a gringo, but I've had A LOT of birria tacos, not only from Colorado, but all over. This experience, from the service to the comfort and hominess of the restaurant were completely unmatched. I wish I knew his name, but he was a younger guy that took our order and instantly he felt like a friend inviting you to eat some his grandma's food while hanging out. He was so nice! Then! Omg, next we got the food. The birria tacos were, hands down, the best in the city. They had the perfect amount of crunch on the tortilla. They weren't soggy at all, a lot of other places are. But the meat was soooo tender and juicy. And the toppings were a huge portion on the side so I could load up as much cilantro and onions and slaw that I wanted. I looooved this. These tacos were incredible. The spice and flavor were immaculate. This is definitely now my go to place for birria tacos.

As a former socal guy who moved to Colorado 12 years ago I'm always on a look pit for excellent street tacos and "hole in the wall" Mexican. I found another gem here, in Matias tacos. The salsa, the tacos, hard or soft and the meats seems painstaking made homemade for a reasonable price and carries that spice I've missed from socal since I moved here. It's a bit off the beaten track and a little sketchy when u pull up but man... the food... will make u gorget about all that. Chicken, birra, carnitas or Carne asada. You can't go wrong. I didn't get to try my favorite Mexican dish. Chile relleno. Maybe next time

I wished I found this restaurant sooner. listen I have been to a lot of Mexican style restaurants but non like Maria’s. They are authentic, as soon as you walk in the entire place screams MEXICO like legit I love it, they have one the best Birrias you’ll ever taste in Colorado Springs. I don’t know why there is even bad reviews to it. The guy there was nice and actually looks like he loves what he does. Overall this place is amazing and I fully recommend to those that are looking for an actual mexican restaurant.

I wished I found this restaurant sooner. listen I have been to a lot of Mexican style restaurants but non like Maria’s. Tou got to love it when a happy accident happens. Stop to eat at one restaurant, and I got told they were only taking reservations tonight. So we cam here instead, and my God's am I happy that we did.

We ordered the Birria egg rolls for both of us. I ordered the chicken fajitas, and she got the enchilada plate, with three different enchiladas. I also ordered the mango margarita.

Where to start on this one. The Berrian eggrolls are hands down out of this world, both in flavor and size.

The enchiladas where, amazing, is the only thing I can say about them. She got 1 beef, 1 chicken, and one cheese. The beef was hands down the best one that I have ever tasted, much better than the other two, and they were both dam good.

The chicken fajitas that I had had such a great flavor. The chicken was very tinder, with a great first tast and a slight lime after taste, just the right amount to offset everything else.

Then there was the margarita I had, with a rim a tajin. This is one of the best margaritas I have ever had, with a very generous helping of tequila.

We live in denver, and we will be coming back to this place when we are in town. Hands down the best small little Mexican restaurant I have...

Real honest review: I was recommended to try Maria’s. Sometimes recommendations are good, sometimes disappointing. I ordered Ceviche and a chicken quesadilla. The ceviche was almost spot on, would have liked a little more shrimp. They give you a (1)fried tortilla with it. The tortilla crumbles a lot and was difficult to use to eat the ceviche. Half way through, I ran out of tortilla. It misses the dynamic if you don’t have the crunchy tortilla with it. I would have much rather tortilla chips provided with the ceviche. The chicken quesadilla was good, very fresh… but it lacked chicken. I could take two bites and only have tortilla and cheese. I paid more for chicken and felt I should have chicken in almost every bite. If not every other.

Both items were fresh and tasted good. I just can’t give 5 stars because it was not perfect. Thanks for reading!
