Well it was my decision to try a restaurant that my wife and I have never been to. I’ve been wanting to try Quijotes for a while now and was stoked to know that we were headed there for dinner.
Upon entering this place, you can see that COVID-19 was limiting its potential. The tables were placed all over the floor and spread out to meet social distancing requirements. If it wasn’t for COVID-19, I can see this place being packed. It has incredible reviews & has their own little stage for performances. This place would be amazing once everything returns back to normal.
Before completing our order we received the chips and salsa. My wife loved them because the salsa was very mild and she enjoyed the tangy taste with the crunchy chip.
We ordered ground beef nachos to start out and took off a lot of ingredients. This did not disappoint. They gave us a very generous amount of cheese and ground beef that it was more than enough for us to share. If we weren’t so hungry, it would normally be enough to fill us both without any other entrees. Needless to say these nachos were incredible and well worth the calories!
My wife enjoyed her breakfast burrito and it was an incredible price at under $4.00 for a breakfast burrito! She thought it was great value for the price.
I ordered the Combo Fajitas and I couldn’t have gone wrong. This came with a mix of chicken and steak and huge portions of rice and beans. Their Chicken was the home run. Incredible chicken that tasted homemade. Their steak was pretty good too. Overall $13.50 for both meats in a fajita and the amount of food I received in general was phenomenal value.
The staff was very attentive and friendly. You can tell that they put tons of effort to making sure their guests feel at home.

Read moreWe've been going to Quijote's regularly since the RJG's return to Colorado Springs in 2018. So what's the draw here? Smothered burritos (as if you have to ask). And, in particular, their hot green. They have a mild one, which isn't to our taste honestly. But the hot is seriously spicy. Like crazy-I-can't-believe-you-can-get-this-at-a-restaurant hot. And super flavorful, which is required given the heat level. We have never tasted anything like this chile - ever, anywhere. And we seek this stuff out! I usually get the egg and bacon breakfast burrito. And it's unbelievably low priced. Not only is this the best food in town - it's the cheapest! Mrs. RJG will sometimes get the huevos rancheros buried in the same green sauce to much glee and delight. Oh, and the salsa that comes with the chips is great too (chips aren't free, but you have extra money to burn here). Everywhere we live - or travel to - we find a favorite. And with almost 3 full years in Colorado Springs, Quijotes is ours! Not much else to say about that.
The location is split into 2 dining rooms - one is a small area that primarily was used during the week to handle sit down and to-go customers. In what has to be considered a genius business decision, they also opened up a large space that was to be used as a karaoke bar and dance floor for the weekend evenings. Well guess what? While this isn’t the first time I have been here, it certainly is the first time I really evaluated it for a review. The last time I was here was a semi-random impromptu bible study earlier this year. After a camping trip was unexpectedly cut short from the county banning all camp fires and an incident with a friends cab, we wound up coming home. Nonetheless, it was a wonderful surprise when driving to my brothers house I remembered Quijotes and decided to stop in for lunch.
After perusing the menu, I decided on the spicy chicken enchiladas. Not only are the prices incredibly reasonable ($4.99/plate), their food didn’t disappoint. The rice and beans were delicious (although I normally prefer a more seasoned rice), the portions were large without being glutonous, they came with a balanced amount of guac and vegetables to add a cool touch to the temperature and the spiciness of the dish. Which brings us to the sauce. I love hot foods and hot sauce, but I don’t enjoy sacrificing flavor for heat. This is where Quijotes succeeds. The plate was spicy enough to open my sinuses and bring a tingle to my tongue, while simultaneously stimulating my taste buds with a hot and savory blend.
