Wow, Simply Wow! We have never looked forward so much to trying a different spot in Corvallis as we were to try Corazón. We made our reservations through the Toast portal and we were all set. Upon arrival (we were 10 minutes early) we were sat at the table that is right next to the door. I asked if we could move to a table not near the door and was told all the tables were reserved which seemed odd because when I made my reservation, choosing a table was not part of the process. We ordered our wine which was the absolute highlight of the evening along with with hearing the specials and reviewing the menus we placed our order with the server. I asked if the scallop special could have the "Sour Cherry Foam" on the side (I am not a fan of cherry flavor) and was told that the chef will not deviate from what is on the menu (no subs or changes) I found this extremely odd, especially for Corvallis. Our appetizers arrived, Prawn, Tostada and 3 Oysters on the half shell from Alaska. The prawn had very little actual meat in the table as it was well over cooked and the meat was leathery. The Tostada had decent flavor but could have used more garnish to subside the late heat but still not bad. The Oysters were served on a bed of table salt and none of the usual, lemon wedge, cocktail sauce, or horseradish, what is was served with was a pipette of very vinegar forward mineutte that did not enhance the taste of the oysters at all. With all of that said, the oysters, every single one, HAD CHIPS FROM THE SHELL IN THE LIQUOR!!! Not at all appetizing, but crunchy for sure. On to the "Main Course"; My scallops arrived, 2 (TWO) bay sized scallops on the half shell with micro-greens and the aforementioned sour cherry foam. We had to laugh at the portion size for an entree. My wife's fish dish that she ordered arrived 5 minutes later was over powered by the grey dollop of vinegary sludge on top of it. When we were asked how everything was by our server I mentioned that I thought I would be getting a little more to eat than I did. We were than "gifted" with 2 cordial glasses of sweet vermouth as an digestif. Yawn. I prefer my sweet vermouth surrounded by whiskey. We are not sure what Corazón is going for as a restaurant, but to charge what they are charging for a meal and to be able to see cars parked on the street in front of the restaurant, people walking by looking in and a constant cold breeze from the door opening and closing. Read moreI went here with a group of friends after seeing the high reviews online. We as a group have been to many of the valley winery's and enjoy getting together to try wines. We all ordered flights and the wines were all ok, for a wine bar I was surprised at their quality as I have had better wines at even Pastini.
One of the wines was quite awful and tasted like tires, this was recommended to us by the owner as one of his favorite white wines and 3 of the 6 of us end up with it in our tasting. This wine smelled and tasted like a les schwab, ( not the popcorn) not something that any other reisling or wine maker that we have ever talked with has said is a positive tasting note. I was unable to finish this wine and went to ask the person at the bar--who happened to be the owner--more about the wine. I was very rudly told that this was a great thing in reislings and then brushed off.
A few minutes later he came by our table and asked how " Everyone else doing alright?" and instead of talking more about the wines just went back to the bar. (It was a very empty night, tuesday around 8:30.) I feel that it is unreasonable for an establishment that's own motif is to help people find wine they like and experience, to have this kind of attitude when it comes to selecting, recommending wine, and interfacing with curious customers.

My friend and I arrive and we had the table reserved for us next to the window, and it was such a calming atmosphere. Even with the couple next to us, we were both quite comfortable!
I wanted to begin our evening with a couple flights and we decided on our servers choice of a white and a bubbly flight. I had ordered the tres leches and thought that it may have come after the flights arrived, I never intend on rushing the chef nor the server. Then the dinner arrived and I decided to dismiss it, only cared to mention it because it really did sound like it would be a nice combo for the wine. Anyway I digress!
Our server, Sarah was always such a treat and she 100% added to our great experience. Seeing the sunset over the buildings as I dug into my tostada was an amazing time. I tried my friends medialuna and couldn’t decide which was better! I haven’t been to a restaurant quite like this, it felt so special having the chef bring us our food and actually having a genuine one on one with the server.
