I recently visited Taqueria Taxco after a friend highly recommended it, and I have to admit, my initial reaction was a mix of curiosity and skepticism since it’s located inside a gas station. However, I decided to give it a try, and I’m glad I did!
We ordered 10 tacos al trompo, which were served with grilled onions, pineapple, and jalapeños. The combination was absolutely delicious! The tacos were packed with flavor, and the grilled onions added a nice smokiness that complemented the meat perfectly. The touch of pineapple brought a refreshing sweetness, making each bite enjoyable.
The salsa served alongside was also a highlight. It had a great flavor that truly reminded me that I’m no longer in Colorado, and it brought back some delightful memories of authentic Mexican cuisine.
The only downside for me was the café de olla; it was a bit too sweet for my taste. If you prefer a less sugary coffee, you might want to consider this before ordering.
