What is going on in the kitchen here? Both of our bowls of ramen were served luke warm. The miso veggie ramen was missing two of the main ingredients, carrots and corn. I had to ask for both. We also ordered extra noodles, which are brought out in a side dish. They were also served at room temperature. We told the server that our food was not even hot, and she just said, "Oh, sorry." She should have offered to have them remade or taken them off the bill. When we came in, the place was dead. We were the only ones in there. Our ramen came out lightning fast, which I thought was strange. It looked very sloppy, and like little to no effort was put into it, hence, the missing ingredients and room temperature broth.
Hot foods and cold foods must be served at a specific temperature. It is a health code violation otherwise. It's only a matter of time before someone contracts a food borne illness at this establishment. Even taking that into account, I'm not sure I would even classify what I had as ramen. I ordered ramen with pork belly, which is typically a fatty, succulent cut of meat, and it was so dry and possibly burnt that it was comparable to beef jerky and borderline inedible. The broth didn't have much flavor aside from being just salty, with no umami depth to speak of; the noodles were overcooked and didn't have much chewiness left to them. The primary saving grace of the meal was the takoyaki, or battered and fried octopus balls. Although I know they're often refried from a frozen premade form, the octopus in this case was unusually fresh, retaining both significant flavor and firmness.
