There are 3 heavy hitting, Japanese owned, sushi restaurants in Diamond Bar. This is the newest one to join the ranks. Even though Kyala has been around for quite some time, the ownership changed during the pandemic. The new owners are a couple from Japan with over 20 years of experience working sushi restaurants in Japan. The new menu and offerings are like night and day compared to the old Kyala. I usually go for omakase so I can get the greatest variety. The sushi and sashimi are elegantly presented and perfectly sized. They're made to be eaten in one or two bites unlike some of the monstrosities produced at less refined places. There are also many season offerings such as ice fish, needle fish, and even stone crab. Although most items seem traditional, the owners are very good at introducing unique flavors and add their own flair. For example, their chawanmushi has a touch of yuzu flavor that really makes it pop. Besides the high quality of the food, what makes Kyla stand out is the more than reasonable prices, the friendly and knowledgeable service, and that there is almost never a wait. Chef Manabu Moriguchi’s kappo-style approach brings out the soul of each ingredient. From the freshness of the sashimi to the lightness of the tempura, the balance and technique were simply moving. It reminded me of meals I’ve had back home, with the same quiet respect for tradition and seasonality.
The omakase course was a joy—not just delicious, but full of little surprises that made us smile. Even the way each dish was presented made us feel cared for.
What touched me most was the warmth of the people here. They were so kind to our child, offering a thoughtful kids’ menu and even making special off-menu items with a smile. That level of attention and heart is rare.

Not normal for a restaurant where you're getting ready to pay from$40-60 per person. Then the long waited hand roll arrives and looks delicious... But where is the wasabi!? After asking for it and waiting 4 minutes to get it, the crunchy nori shell has softened and has become tough to bite down and thru. It was a struggle. That's probably just a rare occurrence, but then the wife finds going thru 2/3 of her nabeyaki udon... There is a twisted strand of hair stuck on the egg white! We told the waitress/ hostess, please cancel the rest of the dishes: another hand roll and a ika sushi, and please get us our bill. She apologized profusely and refunded us for the hairy nabeyaki, and also the coke and ice tea as a gesture. Perhaps too much business, perhaps lack of personnel, overall a bad experience I hope the restaurant...
