Fuji Sushi — Restaurant in Eagan

Update: As I mentioned before, I find myself ordering from here often because the prices are affordable. While they offer a wide variety of options, I usually stick to my favorites since the others don't quite match what I'm looking for. The sushi is still really good—definitely better quality than what you'd find at a grocery store. It's also nice and convenient to stop by for a quick grab-and-go when I'm not in the mood to dine in.

I wasn’t completely blown away, but I really appreciate the convenience. Ordering is super simple, you seat yourself, and they bring the food to you. The fish quality isn’t astonishing but definitely better than grocery store sushi. I was really pleased with the fish-to-rice ratio—the fish portions were noticeably bigger, which was a nice surprise. This was not good at all. Clearly this was designed in the interest of profit. You order from a kiosk and no wait staff, but still you are asked to tip. What customer service that did exist was poor, nothing about the inside was visually memorable or pleasing, the other employees looked absolutely depressed, and every single dish was disposable. And lets get to the quality of ingredients- they were BAD. Avocado was hard, not ready to eat. The sushi rolls did not have enough rice so they fell apart. Salmon was paper thin.

All of the above would make sense for a cheaper entry point but this was priced way too high for any of the above to be excusable.

My first time since it opened. I LOVED it. I was instantly amazed by the menu. The variety on the menu and the detail in each item made me want EVERYTHING. I appreciated the guy at the register because he answered all of my questions. He was very kind and I always appreciate that when I go anywhere. The presentation of my food was really cool. They also separated the wasabi which I was very glad about. (I don’t like it to touch my sushi at all!) This place is very much order and take just like fast food places and I like that concept.
