I came across this restaurant by accident. I was looking for boba in the area and they popped up as really the only place to sell it. When I looked at the menu online I knew I had to try it and boy .. they did not disappoint.

This is two days worth of food just a little disclaimer 😆

The first day I got a vegetable tofu pho and the person I went with got a tofu and vegetable stir fry in a sweet and spicy sauce. Both had such good flavor and perfect portions. Some veggie pho broths can be very bland but theirs had a great flavor profile and was not salty at all. The sweet and spicy sauce for the stir fry was a perfect balance between the two that really had you wanting more.

The second day we got a vegetable and shrimp stir fry which was good but slightly salty. The white rice it came with was nice to have to balance out the salt. The first day’s stir fry was much better in our opinion.

The shrimp with vermicelli noodle was absolutely delicious. The shrimp was perfectly seasoned and the fish sauce that comes with it was equally as delicious. I don’t care for raw bean sprouts so I did take those out but otherwise, delicious.

The vegetarian spring rolls were also delicious. Nicely crisp and filled full. These also came with the fish sauce as a dipping sauce.

Both days we got boba. Their boba drinks are not overly sweet and they even add in coffee jellies to the drink so that was a nice surprise.

When I’m back in this town I will 100% be going back for more...

I was surprised (although maybe I shouldn't have been?) at the quality of the Phô at Pho Van. As an LA resident, I have had maybe 20 different Phô experiences and I figured the new place in my hometown would never measure up - but I was wrong! We were greeted as soon as we entered and found the restaurant surprisingly full. The restaurant is clean and well kept with a pre-1970 Viet Nam theme - including pictures and a dozen boomboxes and electronics. We got directed to a table and after a few minutes with the menu, someone helped my guest figure out what she wanted other than phô. After some discussion, we both settled on it after all - me the #10 (rare steak) and her the #11a (well done steak). The wait on the food was longer than I typically experience - but likely based on how busy this place is compared to my LA fav. We busied ourselves with some delicious spring rolls in the mean time. When the phô arrived, it was pretty on point. Again, I only have comparisons from another city/state but the noodles were cooked well, the broth was tasty and the steak was perfect. I will say that there was more broth/less noodles than I usually see, but the large was still a very filling meal. It was also slightly more expensive than usual but I chalk that up to the location more than anything else. The above is the reason for the 4 stars over 5 - but the food itself was delicious. Overall, it was a fantastic meal and I will be coming back next time...

Certainly the best place in Easton to slurp down a hot noodle soup and they offer a wide variety of condiments at the table for it. Wish their Bahn mi had a little more meat 'cause it's really good, but for $9 you can't complain. I've been thinking about the BBQ Pork since we got it a few days ago (it's what prompted me to finally leave a review) and the spring rolls (both vegan and non-vegan) slap. I thought I'd miss the meat and shrimp but they put in some fried crunchy that I totally loved. You GOTTA get one of the Peach-Orange-Lemongrass teas when you go, they put so much of the aromatics in that makes me wish you could top it off. I like how open the dining room is, it's just clean and open and feels really relaxed and they have a big collection of sound equipment off to the side that's really cool to look at. Quick, polite, efficient service. We stopped in during their 5 year anniversary and they sent us away with free hats and I thought that was just the cutest! Every time I go I leave with enough food for another meal left over and I can't wait to come back! Definitely one of my favorite places to...
