I had tried posting this review 2/22/2023, but not sure what I did wrong for it to not be public.
Short review- The staff are always friendly. All 9 flavors Iâve had so far have been delicious and I canât wait to keep bringing friends to try Snowbing for their first time! FYI: If you get Snowbing and Cruncheese at the same time youâll need to pay from two separate registers. Theyâre right next to each other, so itâs no hassle!
TLDR- I was so excited for Minnesotaâs one and only Korean bingsu place to open! For those who donât know, bingsu (ëšě) is a milk based shaved ice dessert. Many people might have ice shavers to make their own, but it hits different when itâs made with the milk base. Even though I live about 30 minutes away Iâve been almost 10 times. Snowbing has 10 flavors: Traditional Red Bean, injeolmi, strawberry, green tea red bean, chocolate, oreo, mango, watermelon, yogurt berry, and strawberry cheesecake. Checkout the photos included!
Flavors: The last time I went I finally tried the chocolate one, which I had been holding out on because I was worried itâd be overpoweringly sweet. It wasnât! I would order it again in a heartbeat. Iâve gone with friends whoâve been worried about trying the yogurt berry because they didnât want more dairy with the yogurt, but the yogurt is (in my opinion) mainly just drizzled on top for looks. We didnât think it was too yogurty and really loved this bingsu because of the 3 fruits in it. I have yet to try the strawberry cheesecake before Iâve had them all, but canât wait to check it off my list.
Pro tip: Eat the bingsu first, theeen get your cruncheese. If you eat the cruncheese first, there wonât be enough space for you to enjoy the bingsu! When I went my first time I was with 3 other friends. We got our own cruncheese then shared 2 different bingsus. I can eat my own bingsu bowl by myself as long as I eat that before any other food.

Snowbing is tucked into the Asia Mall with a bunch of other restaurants and even a grocery store that looked like it had a variety of Asian snacks. I ordered the mango bingsu, and I thought it was expensive until I saw how big it was. This could've been shared among two people easily!
Most of the mango was ripe and they don't skip on the toppings. The shaved ice was soft, had a slight sweetness to it, and a nice milky consistency once it started to melt. The shaved ice only really started to melt towards the end though since it was taking me some time to eat it all. I lucked out and got some seating, but it was pretty packed while ordering and as more people filtered in too. Regardless, it was nice to have something to cool me down...

I enjoy all the fresh fruit that we've tried - mango, strawberry, and watermelon. There are also more traditional flavors with the pat 'sweet red bean' and injeolmi 'sweet rice cake' which I love as they are delicious, yet not overly sweet. There are also oreo and strawberry cheesecake which have gotten rave reviews from my friends. I know these are not all the flavors but I highly recommend that you check it out with friends... then you can try...
