I have been going to "A Wish Or Two Ago" for many years now, both at the Rt 44 Location near Grand Island before the building was sold out from under them, and now at the new Eustis location that opened last July. I have lived in Paris, Manhattan, and San Francisco, towns all known for fabulous bakeries, and I have never found a better place to buy my croissants, baguettes, morning pastries, dessert pastries, even CrĂšme Brule, various Quiches, and monumental special holiday desserts.
I used to make my own croissants and baguettes; having tasted those made by Phillipe, I no longer do. We entertain, including some formidable dinner parties, on a very regular basis, and Kathleen and Phillipe ALWAYS supply some aspect of the meals. For the special occasions, there are always the flavored croissant (chocolate; almond cream, etc) and Bavarian Cream Eclairs, but for HOLIDAYS there are things like a decadent peach glazed pie that Phillipe did this year for Thanksgiving (also in apple) and the masterpiece, his Bûche De Noël - the best I've ever had.
Funny story - there's a post here on Google Maps from a woman who complained about an "off-taste" in one of Phillipe's croissants her husband brought home; I'll bet dollars to doughnuts that he brought home ALMOND CREAM croissants, and expecting a plain butter croissant, her taste buds were shocked... Upon walking in, it honestly felt like they had been there for years. Whoever designed the inside, really put some back work into it. There are antiques and collectibles everywhere. They even have a rental space for parties.
When we got there, there was a line of about six people for the bakery. It went very fast, or I was very distracted by all the things around me anyway.
My purchase consisted of a Nutella pecan roll (it may have been walnuts, but I forgot to write this review the day I did it), a caramel crunch cookie, and a chocolate croissant.
The Croissant was gone before I could heat it up. It was absolutely perfect, even at room temperature. The cookie was so sweet and delicious. I did have half when I got home and half later that evening.
Now, that Nutella roll? At first, I took a bite at room temperature. And I was really not a fan of the texture. To resolve this, I cut it in half and microwaved for about 15 seconds. Yaâll, that did the trick. It was fluffy and soft and warm and just perfect.
I will be coming back here.

I was surprised and pleased to hear that they had purchased the old church that I shopped at for leaded glass. I found a feeling of peace calm comfort sacred reverence in this building when I was there 2 years ago.i can't explain it effectively in words- it touched my soul. So as I was driving by recently I had a gentle nudge that I needed to stop. It just so happened Kathleen and Phillippe were working outside landscaping. I gently yet persistently ...ok I begged them to let me take their picture in front of the church/bakery. And also heard their plan. This church is special and they will bake the bread of life. This is a mission and a calling to them guided by the Holy Spirit. To hear Kathleen talk about the guidance even through the challenges- there is more than just 4 walls to this bakery. And I have to agree it just feels special. At this time the bakery isn't open since there are a few more building details.
