Preface: Not a local. I've mostly eaten ramen in Tokyo and the Bay Area. I tried spicy miso, tonkotsu, and shoyu.
5 stars not for excellent ramen but to support the continued existence of a decent (currently, but potentially really great one day!) ramen joint in Fargo.
The portions are large and price point is fair. The decor is fun as well.
The 3 broths I tried all lean toward sweet. Since there aren't traditionally sweet ingredients in dashi I'm not sure what they've added but I was left with a saccharine aftertaste by the end.
The tonkotsu broth could be better. Ideally the broth is a deep umami bomb, made creamy and pale from stewing various cuts of pork (some ramen chefs will add chicken, or dried fish ie sardine, anchovy, mackerel). The tonkotsu broth here was pretty thin and lacking a creamy, rich texture. It was definitely pork and had some depth but the overbearing sweetness really robbed its potential.

Read moreI have been picking up dinner here weekly (sometimes twice a week) for over a year. I had quickly become a sort of "regular" being greeted by name every time I stopped in. The service here throughout this time has always been 5 stars.
I had noticed recently that the consistency of my order has declined. I have ordered the same thing throughout this time, and it had always been consistent in taste and quantity. The last few orders have been disappointing - either lacking in quantity (half a typical order), missing ingredients, tasting completely off, or ingredients not being cooked properly.
I'm not sure if this is related to a change in staff, a change in food supplier, or due to the additional delivery orders they've now started taking. It's not worth risking the $30-$40 anymore given how inconsistent it has been, I just don't know if it's going to be really good or really...

The ordering style of the restaurant is half way between a sit-down and fast food. You order and pay for your food,then you get a ticket for where someone delivers the food for you.the service was also good. On the speedier side (Kind of similar to Noodles and Company)
the steak pho I ordered there was incredible. Flavorful with complex profound under flavors.( I personally liked it better than the pho at Jade dragon or Viet palace, two other well known places to get pho in Fargo)
The main seats are these gigantic wooden booth seats that are covered in past people's doodles/writing. It was fun to look at what people made.
