Cute little candlelit bar area to sit at if dining alone. I popped in in hopes of creating a cheese board and a flight of wine. Solely operating on the information from the website and cheese shop around the corner, I was a bit surprised on how it worked when I arrived. The server was accommodating but it was obvious the create your own options weren't as common which I found surprising being a tourist town. They only had a platter for two but I was dining alone and didn't have the option for takeaways after if I didn't finish my order. Thankfully it all worked out and I ended up doing a little a la carte design of my own. I went with three cheeses (Gouda, trufado, wine goat), olives, house made wine jelly and the baguette. I ordered wine, she offered a sample and then informed me of a happy hour Sauvignon blanc option which was my favorite so that was a great coincidence. My total for the wine (1/2 price for happy hour) and board items was $35. Not bad, just not much cheese. It took awhile to place my order, I think she was giving me extra time to peruse but I was ready and HUNGRY. ☺️. The cheese was delicious-portions were tiny compared to nearby options in Denver for the price point. A $4.50 price point for the same ounce of Gouda verses the trufado was surprising. The baguette was very hard, but tasty once you got to then insides. The olives all had pits and a pit container was provided, I would have enjoyed marinated olives more in a tempanade format to allow for them to be used on the baguette with the cheese if desired. The house made wine jelly was very flavorful (watermelon currently) but it had a very runny texture and water pooled in the container. It was not jelly-like at all and also much thinner than a spread. Perhaps it was the time of day, but it got busy quickly and with one meal preparer, one cheese board/options preparer and one server, service was slow and it took awhile to get my check after finishing as well. I wasn't in a rush, so I didn't mind but it did seem as if more help would have sped things along. Obviously more servers would likely slam the kitchen so this may be premeditated but still something to consider since it was 3pm. At 4, it appeared a manager came in to help briefly but then dined outside after opening more tables for service with still only 3 employees working. A few reviews have mixed the cheese shop and the bistro but overall the reviews are strong and I would agree. Service is huge right now and even though it's a niche market, sometimes people want to be in and out in an hour with 3 or fewer people, especially if only dining as one at a bar seat. Read moreBEST 👏BRUNCH👏 IN👏 TOWN. It's our go-to Sunday brunch spot - everything on the menu always comes out amazing, and they have Angel Food French Toast?!? It's paired with a delicious savory spinach quiche that makes it the ideal sweet and savory combo. The Shakshuka is also hands down the best I've ever ever had: it's so flavorful comes with in-house baked bread perfect for sopping up the extra sauce. This place is never busy for brunch, I think it's still a secret they even serve brunch (yay for us:).
The seem to chefs really care about the food they create and serve and always take pride in putting out the best dishes. Plus you can sit at the bar and watch them cook right in front of you! Great atmosphere and ambiance overall. We have also been for dinner and it was surprisingly cheap prices (especially for Old Town Fort Collins) for really upscale dinner dishes, that were also soooo delish.
Because they have a small kitchen, this isn't a place to come to if you're in a rush - but it's perfect for a French style, hang out with a few mimosas with friends and great food for a leisurely brunch.

Well it did not disappoint!
My husband and I went here for a date night, we sat outside and did the build your own meat and cheese plate.
Our server was extremely helpful in answering all out questions and guiding us to how much roughly to order. We did 7 different cheeses, 3 meats, 2 sides, and an AMAZING salad. We split everything and we were more than happy to have had the salad to break up the heaviness of the cheese & meats and cleanse our palette.
I would say if you are REALLY hungry this might not be the best suited place for you. We came with the intention of the above being our dinner for the night and we left full, however, they are small portions as you pay by ounce.
Our favorite cheese was up and by far 1 of the Blue cheeses. We didn't agree on the second place because we both liked different cheese.
