At the time I am writing this, I have now been there at least four times. The first time was a to-go order a friend brought me. It was a beef enchilada of some type and I was not impressed at all. The meat didn't seem to have any distinct flavor and I was a little put off about trying again.
However, I ended up going in and it is a different experience. I now understand why I had the experience I did the first time. This is very much a build your own type of place. There is no oven in the kitchen prep line as many restaurants have where they assemble enchiladas for example, add cheese or sauce, and push through a broiler conveyor. Rosa's assembles very quickly without the broiler part, so your food is ready frequently before you grab a table. There is a prep bar in the middle of the restaurant with a broad selection of salsas: roja, verde, picos, etc. So, a lot of your experience is up to your taste and mood.
What got me in the mood to write this and to visit even my third time, is that they were promoting the Chili Verde Dinner, which sounded like it's worth a try. It is. First, it's only $10 something and has a puffed tortilla edible bowl and is filled with a very nice beef chunk stew with green chilis. It comes with rice and beans (very standard), very good and completely edible. It was very filling as well.
The restaurant itself is visually very busy (lots to look at) and really quite pleasant. The staff is always friendly.

Read moreWe ordered catering with less than 48 hours' notice for our one-year-old's birthday party (expecting 25 guests). My initial email was answered in five minutes with information about the most popular orders and the process. I emailed back with my selection, the Taco Bar for 25 people. Again, the email was responded to within about 5 minutes and included a payment link to complete my order. All paid up...I wasn't sure what to expect next. It felt too easy...nobody seemed to be worried about the last-minute notice. The next day when I arrived to pick up my order (2pm pickup, I was late at 2:38) they had it ready in about 5 minutes and loaded it onto a cart and brought it to my car. I was very concerned that the food wouldn't be hot, especially because I was late on the pickup. When I got home.. I was blown away by the amount of thought they put into our order. We had three giant stacks of soft tortillas, a huge bag of crunchy taco shells (wow these were delicious!), large aluminum trays of picadillo beef and chicken, lettuce, tomatos, cheese plates, napkins, wrapped plasticware, plastic serving spoons and tongs. We could've had this party in the parking lot.. they thought of it all. The food was also piping hot and remained hot for a very long time in the aluminum serving trays. Waited until 10:40 to start asking here my food was, which may not seem like very long but if you know Rosa's then you know that's pushing it. Was told it was because they had to switch to lunch.. not seeing as to how this is my issue as I ordered breakfast at 10:23, breakfast is served until 10:30. You have orders still in for breakfast, start preparing for lunch yes but get my order out. Manager said she would get my food and also give me a refund. Awesome, cool. A few minutes later she comes over and is asking if we want lunch, no we don't want lunch, we want the breakfast we ordered. Now the answer is we can't do breakfast but we can do lunch. Why would I order breakfast if I wanted lunch? Why would you tell me I'll get your food right out, AND THEN NOT BE ABLE TO DO IT. Absolutely ridiculous. Two other people waiting with us. We were number 37. Number 33 who had been waiting for 30 minutes by the time we got to 20 minutes and another girl who came in after us waiting for 4 tacos. We weren't alone. Literally watching other breakfast eaters who got in after us get their food and then the lunch crowd started being served. Close out your tickets on the screen. Feed your customers.
