I saw this place pop up on my Yelp recommendations and it was a little out of my way but I finally decided to go try it, and I'm so glad I did! The trailer is in a large parking lot which normally would be a bit of a turn off but I decided to trust my gut with my fellow yelpers and glad I did. When eating it on the spot, the warm parts (tempura, eel) were warm, and the cold parts (raw fish) were cold, I'm happy to report no temperature control issues in this trailer, and the quality of every roll I got was at least as good as the better sushi restaurants in the area!
Ok that aside, WOW I really enjoyed my experience eating from Sushi Bori today for the first time. I always try a spicy tuna roll as my baseline, then I decided to get two specialty rolls which honestly despite being hungry was a smidge above how much food I could eat and shared some with my neighbor!
The spicy tuna was a great fundamental roll, the fish was fresh, I liked their addition of a little crispy tempura bits, and the green onion did give it a bit of a fusion spin but without being overbearing. Solid roll, but obviously much less complex flavor than specialty rolls.
The Akita roll (spicy salmon, cucumber, spicy tuna mix, green onion, spicy mayo & crunch) I expected to be my favorite given spicy tuna being my jam, but despite the slight crunch in it I felt it didn't have as much structure as I sometimes like in my rolls. The flavor was spectacular and grew on me even more with every additional piece, but most likely its because I'm so used to seaweed that the soy paper in it wasn't what I expected? To be clear this was one of the better tasting rolls I've had overall but I wasn't as wowed by it as I expected to be given the description.
The star of the show was the orgamilicious roll (tempura shrimp, avocado, eel, spicy crab, eel sauce and spicy mayo). This is the type of roll that I could sit down with eat a piece, palate cleanse, chat, drink some tea, eat another piece a few minutes later and take my time with. It's one I really savored and regret keeping for last because I was full before it ended but this one roll by itself would be enough to keep me coming back, even if it weren't for all the awesome other options I saw on the menu (Bacalaito, mango tuna, etc. etc.) This roll was my version of perfect, each bite had so much complexity, freshness, variety in textures, temperatures, flavors, salt and sweet, it would be overwhelming if you try to shovel it but if you take your time with it, it was really just perfect!

I just finished 12 pieces of nigiri(tuna/maguro, yellowtail/hamachi, and salmon/nama sake) and it was great. My two favorite restaurants to date after having eaten sushi for 15 years are any of the three masa sushi locations around this area, and RA sushi I. River oaks. On par with them of not exceeding. The salmon nigiri was more on par with a shashimi cut, same with the tuna. I also tried the Akimi roll and all I can say is I am very satisfied and will be frequenting this establishment often. The staff were awesome and very friendly and personable. You could tell they cared about and had pride in their dishes....
Read moreThis was my second time getting food from Sushi Bori, last time I used Door Dash. I didn't even realize the restaurant was a food truck. If you're feeling wary because it's not a brick and mortar shop, PLEASE do not. The cuts of fish they use are fresh and very generous in size so you definitely get a good amount of food for what you're paying. (I've been to restaurants where comparatively the fish slices will be both thin and tiny. Not here.) The truck owner is also really nice. My favorite roll has to be the Texas one (with the crawfish).
