Our family lives in Carbondale and we had driven past this restaurant several times after it changed hands a few months ago. We were unsure of the cuisine as it's fairly nondescript outside, but after looking at the website and seeing lots of positive reviews we decided to give it a shot.
We visited on a Sunday morning around 11:30 am. We had checked the website to make sure they were open, but we were greeted by a flashing closed sign when we entered the parking lot. However, a quick phone call resulted in a cheerful change of the sign to open and we filed in the restaurant followed by a few other groups that were waiting in the parking lot.
We were pleasantly surprised by the clean interior and the nice menu. Our server, Ellie Mae was friendly and greeted us quickly. After reviewing the menu we were ready to order. Ellie May come over to the table with a handheld POS terminal, she seemed to have some trouble with it, but ultimately took our order for rigatoni with butter noodles for our 8 year old daughter, a Caprese chicken sandwich from my wife and the Greek burger for myself.
After a few minutes my daughter's noodles came out but unfortunately they were made with marinara sauce instead of butter. Ellie quickly apologized and promised to return the proper dish in a few minutes. The noodles did come out and were prepared correctly the second time, my daughter enjoyed them very much. Shortly after my wife and my entrees arrived., however instead of the Greek Burger I was presented with a standard Hugo's Burger. Not wanting to wait for the order to be redone, and also not wanting to embarrass our server a second ttime I went ahead and kept the burger. Our meals were delicious and the burger was very well prepared, even though it wasn't what I originally ordered. I enjoyed it very much

Read moreHugo's has potential. The food was good (pictured below). I ordered the Flat Iron Steak and it was cooked correctly. They presented the steak with fried onion rings on top of the steak and garnished the steak with either grilled or fried vegetables (it was hard to tell based on their consistency). Initially I thought one of the vegetables was a fried Jalapeno, but it turned out to be a carrot that was burnt (through and through). They probably should have left that one off the plate. That was the only problem with the food, everything else was good. Lastly, the atmosphere could use some tweaks. The tables and chairs looked nice, but were small for a party of 4. Also, the chairs where comfortable, but oddly enough, I could not get my coat to stay on the back. Because of the shape of the chairs, it kept falling to the floor. I ended up folding it and tucking it behind my left side, which was not very comfortable. Maybe a coat closet would be a solution? Also, I think the dining area could use some booths to provided more table space for a party of 4. Lastly, the lighting was too harsh. It did not seem appropriate for this type of dining. Read moreMy husband and I just came into town for a business meeting he has the next day. We looked up restaurants in Glenwood Spring, my husband is big on reviews. We decided to give Hugo’s a try. This place did not disappoint. The feel when you walk in is classy. But not in a pretentious way. The staff immediately welcomes you and made you feel like you’ve known them for quite sometime. Now onto The food. We ordered the calamari and the chicken lollipops. We each had a cocktail. We eat Calimari in a lot of places and this was by far the best. Melt in your mouth not over breaded it was light and crispy. The lollipops were tender and meaty with a great sauce. I ordered the Special which was a pasta with lobster in a pink sauce. There were so many chunks of lobster, the pasta was cooked to Perfection. My husband who loves braised short ribs, ordered the Braises Short Rib Ragu. The presentation was lovely, the dish came with some burrata on top, and when mixed in it made everything even more creamy. The braised short rib was plentiful, juicy and tender.
