A Hidden Gem in Waimea — Dom De Lucas Delivers an Exceptional Dining Experience
We had the pleasure of dining at Dom De Lucas with a party of eight, and from the moment we walked in, we were blown away by the gracious hospitality. The staff went above and beyond to accommodate our group with genuine warmth and seamless service — a rare find, especially for a larger party.
We began with the mozzarella bread and caprese — both elegantly simple, but executed perfectly. The mozzarella was impossibly fresh and melty, with the bread golden and pillowy. The caprese balanced heirloom tomatoes and basil with just the right kiss of balsamic — a refreshing start that set the tone for the meal.
Our younger kids devoured the keiki spaghetti and meatballs and the Margherita pizza, both clearly made with care and quality ingredients. The meatballs were tender and flavorful, and the pizza boasted a beautifully crisp crust with bright tomato sauce and fragrant basil.
For the adults, we sampled a range of entrées — the shrimp scampi was buttery and garlicky with a perfect al dente bite to the pasta; the carbonara rich and comforting without being too heavy; and the special of the night (a beautifully presented seafood dish) was the star — fresh, nuanced, and expertly prepared.
To top it off, their wine list is both well-curated and reasonably priced, featuring a thoughtful selection that paired beautifully with our dishes.

If you enjoy wine then you will definitely enjoy their vast wine list, we got a bottle of the cheapest wine they had and it was delicious. The only reason we did not give 5 stars is because once we had our plates taken away we had a little bit of wine left and we were just going to stay a bit and finish it. We had been here less than 45 minutes at this point when (what I’m assuming was the front of house manager) came to take our card. Once she swiped our card she asked us to basically hurry up because she had a table of 9 coming in and she needed our table for it. We were somewhat caught off guard by this and decided to quickly finish our wine and leave. We realized once we left that there were seats in the other room that they could have put us at, and we would have happily moved and would have probably ordered a few more drinks. The bruschetta was a great start, as were the Caesar salad and the Casa. Maria salad. Half salads were enough to share between the five of us.
The special was onaga sauted with a wasabi shoyu sauce over white rice. The onaga was DELICIOUS and PERFECTLY COOKED, which really showcased the chef's talent. Unfortunately, the rice was flavorless and mushy, a real disappointment. Who in Hawaii cannot cook rice?!
Others in our group ordered the shrimp scampi, alfredo with shrimp, fresco verde with sausage, and carbonara. The pasta in each of these dishes was gummy. It seems as though the pasta was fresh, and fresh pasta often comes out gummy and raw-tasting. The sauces of each pasta dish, however, was flavorful. Tiramisu for dessert was very nice.
