Pho Express - Hoboken — Restaurant in Hoboken

So I ordered delivery from here after craving some restaurant-style Viet food. Let me start off with the delivery: great! The pho came in Tupperware bowls perfect for pho! No having to scramble to find large soup bowls at the Airbnb I was at. Delivery was timely and packaging of the food was great. The food was almost there but not quite fully satisfying the expectation I was hoping for with my craving. Granted I did take out so I’m not sure if they’re taking their own spin since I didn’t get to chat with the staff. The pho was good. the ever so slightest difference in soup flavor but it was still good. Just different. Some garnish that I didn’t expect to see on pho too like scallions. The shrimp spring rolls were a miss for me. The herbs/vegetable part of the filling was different than traditional (didn’t have mint/basil, had carrots, etc) so the flavor was a departure from that hit I was hoping for. We ordered Uber Eats delivery from here and were not fully impressed.

The lemongrass pork banh mi was very ‘stingy’. In half the sandwich there was barely any meat and about 3 pieces of pickled veggies. The other half had more meat but again not many veggies. A traditional banh mi would have been filled with cilantro, mint, lime, pickled carrots, daikon and cucumber at minimum and maybe pâté and meat floss. The bread was also chewy like Italian bread - not a French baguette. Although the pork had a nice intense flavor, it was disappointing for +$13. The chicken pho was much better. The first time I tried this place I couldn’t stop thinking about it for days. It is authentic, clean, and the flavor lives in my dreams. I love the build your own pho option, the raw eye of round is so fresh, I can’t get enough of their brisket, and their delicate but deeply flavorful broth brings everything together into the most comforting experience. The banh mi baguette is everything you can ask for, perfectly crunchy and soft, and every filling is great.
