My party of four made a reservation during the soft opening. We expected things to go a little bumpy and were momentarily confused when our reservation wasn't on the list.
We were pleasantly surprised, however, to be seated right away and quickly had waters in front of us and drinks and appetizers ordered. The whole experience was smooth sailing and excellent service. The space is warm and welcoming. It's limited seating but very well spaced so we didn't feel cramped at all.
We had Tuna Tataki, Potato Mochi, and Spring Rolls. Each one was awesome and flavor packed. Drinks were appropriately strong and expertly made. I had their house old fashioned which is not a drink everybody gets right but the bartender, Yuri, knocked it out of the park. My party all agreed the drinks were great. Highly recommend the Black and Gold sake, we had a bottle for the table.
Deciding on an entrée was not easy. Everything on the menu sounds great. We each ended up picking a different ramen so we could compare. Not only was each dish really good, each one had its own identity and style. It didn't feel like we all got the same thing with different proteins rather each bowl was its own experience. I highly recommend the extra noodle option but the base portion was plenty filling according to my friends.
The pork was melt in your mouth to die for. Each bowl had its own selection of vegetables. My spicy miso bowl had some kicking jalapeños and bok choy. The broth was delicious and complex but I had hoped for a little more heat to it. Maybe a gochujang or chili oil addition would get the heat I was looking for but it was great either way. My only complaint was that the soft boiledeggs were not soy marinated. The chef later told me he has plans to incorporate them.
I forget our waitress's name, she is tall with blonde trendy hair shaved on the sides. You know who you are. Her service was great and she kept us informed and smiling the whole time. The staff was all incredibly welcoming and eager to share their vision for the restaurant which felt awesome. The experience overall was great and we'll definitely be back as often as we can manage it.
There is one small elephant in the room, the business located next door has an invasive musk that you will pick up if you're sensitive to smells. I was not bothered by it. The staff assured me they were working on a solution. After a short while inside even my wife said she no longer noticed the smell but I figured I would make mention so you're not surprised on your visit.
Long story short. Great time. Great food and drink. Great people. Go try it for yourself and help keep Noble Ramen in Keene for years to come. I know we'll be back soon.

My friends and I tried a lot of different items on the menu but let me tell you I would've eaten absolutely everything if my stomach was big enough
The staff were super friendly and helpful it felt like they were paying a lot of attention to us without being overbearing
The food was amazing, I got pork Ramen and it was genuinely the best pork ive ever had in my life highly recommend
The even did a birthday celebration for my friend which felt genuinely and special normally I hate that stuff but the vibe of this place just hits different. Nothing felt forced they do stuff because they care about their guests
Do yourself a favor and try this place and then tell everyone you know about them

Especially the nachos - completely unique and soooooo good! The only disappointment was the tonkotsu ramen - the pork and toppings were excellent but we found the broth to be bland & flavorless - not the rich creamy broth you'd expect - hoping it was a once off thing - we will definitely be giving it another go...
