Finally got to try the pizza tonight and have to say it was worth waiting for. It is a true representation of New York style pie. Most of what is in Klamath is what I call California pizza. A cracker like crust piled with toppings for flavor A true New York pie is more about the flavor in the crust with the toppings to give accent favors but not so many toppings that it takes away from the crust. Plus a New York pies is cooked at such a high heat to many toppings and it doesn't cook right.
So where to begin. The crust has a nice chew to is with a crisp bottom from the super hot oven. I'm guess 700 if not more. Gives it a char. I would have like a more aged flavor of the yeast but I understand the issue at having to slow rise the amount of dough they go through for the amount of time that takes. They only have so much room for storage. The sauce I was worried about after reading their description of seasoning but to my relief it was perfect. New York sauce is thin and not very acidic like the thicker sauces at a lot of chains. You taste it but it doesn't overwhelm the pie. The cheese is the perfect amount and good quality. For topping we got a large pepperoni and and half bell pepper half cheese. A good test for New York style is Plain cheese. This is where I like a little more age on the dough but like I said I don't see where they could possible store the amount of dough they would need for that amount of time. All together the cheese pie had good overall flavor where the cheese and sauce did not take away from the crust. The pepperoni was nearly perfect. Just the right amount of pepperoni so you taste it but that's not all you taste. Spot on. The Bell peppers were nice and fresh and still had a nice crunch to them. Again the toppings were just the right amount. In conclusion I must say they have done their homework and I admire all the hard work they have put into their restaurant. Making New York style pies is not an easy task and is a lot of work. If you like New York pies you will not be disappointed.
Just a warning the place is small and seating is very limited but pretty much every authentic mom and pop New York place I have been to has been this way.

The crust was perfect, they prepared it exactly as we asked, and the pineapple on the Hawaiian side of our pizza was hand cut pineapple (not canned).
