Update June 2021: I've been coming here since 2016, and I haven't ever tried anything that didn't taste incredible. Troy is a fantastic chef, and so is his mom. There are places in Louisville that are more expensive and have a more chic atmosphere, but the sushi that Raw produces time and time again is lightyears ahead of any other sushi place in the area. The ONLY thing I can say that's critical is that they don't update their hours on Google Maps or any other website to match if they're closed for a holiday or in the case of the pandemic when their hours shifted. I definitely recommend calling to make sure they're open if there's a reason they might be closed, but this place is 100% worth the slight inconvenience.
Update August 2016: I stopped by again today. I had the calamari roll. It was as tasty as it was beautiful. They have introduced a new appetizer, called the "Jalapeño Business," and it is wonderful. It definitely puts other jalapeño-popper-style appetizers to shame. Its made with spicy tuna, cream cheese, then deep fried. The jalapeños are large and fully grown, which adds to the flavor. You can tell they are fresh, as are the rest of their ingredients.
Raw is by far the best sushi I've ever had. Between the many sushi bars in many states, this one has one of the best atmospheres, some of the best service, and definitely the best sushi I've had. One roll plus an app will fill you up quite nicely, and I'm a pretty hard one to fill up. I had the Punk Rock roll as well as potstickers and both were great.    Read moreMy first time trying this Japanese sushi bar and restaurant but it won’t be my last. When I walked in I was greeted and given a table to sit. The sushi chef and his area was right behind where I was sitting and I could stand up and watch him make the sushi and admire the expertise. They have a good variety of choices on the menu including many vegetarian options.
I chose several options four variety of rolls and started off with a Gyoza appetizer which were fried and only contain vegetables which was enjoyable. They then brought out some complementary edamame. This is the first time I’ve tried these it was like similar to eating peanuts but tasty. The salad with the ginger dressing was especially tasty and I look forward to trying that again.
I had several rolls as well as sashimi and Nigri. A friend of mine ordered a Korean dish which I could not pronounce but he said it was especially tasty. The sushi rolls were substantial in size so I probably shouldn’t have ordered as many as I did but I did not know what to expect.

I enjoyed the dressing and firmness of the meat in the Squid salad. I think what I liked best was that it was in a bowl rather than a plate and that gave me more of their tasty dressing to dip from. For my main coarse I had to have the Maui Hawaii roll since that is my favorite vacation spot, and we were just there 4 weeks ago. We will be back again when we come to dog shows in Buckner, but next time I'll try a different combination. This roll was more like desert with the fruits, coconut flakes and coconut shrimp. It was good, but I like more "kick". I would highly recommend it for newcomers to the world of Sushi. I tried my wife's Lobster roll and it had a little more zing, but next time I'll move more into raw fish and spices that I'm used to rather than the cooked seafood and sweet tastes.
