After several glorious outings, the last few have not been that. My last outing was so poor I thought to edit and update my rating, leaving my earlier comments for context.
As you can see, I really enjoyed this restaurant. If it was just one or even 2 poor services I would pass on an update.
This last time we were visited by 3 different managers and a host who stopped in front of our table, looked at all of us in turn and walked off without saying a word. Actual servers and service was much less reliable. Btw, there did not seem to be any staffing issues when we were there just a comedy of poor interactions and average food.
How about instead of explaining that "carbs are bad" when you finally deliver the bread with the meal, just say there was a delay. When you forget to deliver the pasta with a meal, say that its coming next instead of just walking away and letting us figure it out for ourselves. When you offer seating outside in very cold weather, make sure the heater is active and doesn't take 10 minutes to change tanks, change them again and finally get it working. Don't send some big host by to turn and gawk at our table without saying a word. And please, when you finally have someone willing to engage, maybe a brief interaction, not incessant overtures that feel forced and take away from what little experience is left
For a restaurant that attempts to be a fine dining experience, this is not that, anymore. Saying hello and offering to provide service is not actually doing the work of providing service. If I'm at a Bucca or Olive Garden my expectations are tempered.

Absolutely fantastic. Sidney our Captain made it a much better experience than food alone.
The vodka rigatoni was on par with the best I have had, with real depth of flavor and texture to the noodles.
My next favorite was the spaghetti and meatballs. For a simple dish the sauce was subtle with just the right amount of tomato and sweetness. The meatballs had an excellent texture with a perfect blend of meat and seasoning.
The lasagna was well above average for my tastes as was the bread and a special cheese and bread appetizer we had.
All in all this was really a great experience.
Foremost the service was on par with much more expensive restaurants on the strip. My drink was well attended and frequent visits by hosts and our Captain made sure we were always cared for.
The atmosphere was well fed with ambient light and artistic accents. Our both was comfortable and spacious. We could talk and take in the experience in a very visceral way without feeling left out.
Which leads me to value. This restaurant as a fine dining destination at Tivoli, gives value a new name. I can't remember a better overall Italian experience.
I have found a new place to frequent and a new high bar in service.

A replacement for Brio Italian Grill at Tivoli Village, approximately 180 indoor seats plus several on the patio, it was after greetings at the hostess’ stand that four guests were led to a table, service attentive and friendly without the theatrics of Carbone.
Boisterous but not exactly loud in the lounge it was after deciding on Beverages that seventeen items were selected, complimentary housemade Focaccia plus Garlic Herb Olive Oil mixed tableside soon to arrive and consumed nearly as quickly.
Happy to see Chef Adam Rios at the pass Appetizers consist of Soups, Salads and Antipasti, the Meatballs tight but not overworked adjacent a triangle of Cornmeal while the Pizza and pair of Salads each put Cheeses to good use with the former particularly impressive.
Utilizing fresh Ingredients across the board, both Starters and Entrees a veritable bargain despite outpacing most of Las Vegas Boulevard, course two featured four Pastas plus slowly-simmered Gravy loaded with Meatballs, Spare Ribs and housemade Fennel Sausage.
Able to handle big volume thanks to skilled cooks plus a sizable kitchen Pastas are made on-site daily, and although Eggplant on Casarecce was good Al Solito Posto’s filled options including Duck Ravioli and brilliant Tortelli with Scallops make for tough competition.
A significant overhaul of the old menu, though Las Vegas’ best Lasagna remains unchanged, additional entrees see Chicken Parm shine thanks to less fuss while enormous African Prawns served Scampi-style and Mushroom Risotto are faultless.
Sad to see the Rainbow Cake scrapped, though Hazelnut Semifreddo and an Italian riff on Tres Leches now stand as two of Sin City’s most inspired Desserts, Tiramisu arrives in the form of Cheesecake while the Pie-sized Apple Crostata remains a texturally masterful showstopper served piping hot with a side of Vanilla Gelato waiting to be...
Read moreUpdate: Always a joy to dine here. Bummer, they no longer have Rib Cap. I've been here a couple of times. The first visit was a Sunday afternoon, and we sat at the bar. We enjoyed watching the bartenders prepare drinks. I ordered the God Father Cocktail, which is similar to an Old Fashioned but sweeter, in my opinion. Tupac had a fruity drink, and I forgot what it was called. Service at the bar was the best. I believe our servers name was Carlos. We enjoyed it so much that we returned on Wednesday, but this time, we opted to sit in the main dining room.
We had 7:30pm reservations and we arrived on time. We checked in, and the host apologized and said they were running behind, and it would be a 20-minute wait. No problem, right? They sat us at the bar area on a high top, and we had a drink. Gosh, 30 minutes passed, and I started to get annoyed. I started to see 2 sets of people who were also waiting for a table to get seated before us. At that point it was past 45 minutes and I was very upset. I started to walk to the host but ran into a manager. I informed him that we've been waiting for over 45 Minutes +. He said he'd check on table for us. 4 minutes later he shows up and took us to a table. Clearly, the Host forgot about us. I was still a bit upset cause I was now HANGRY. Long story short, ZERO STARS for the Hostess but 5 Stars for the Manager and Julian (server at the high top table.)
Food: Cacio E Pepe (Best I've ever had) Whole Fish (Branzino) Fried Mozarella Mushroom Risotto Rib Eye Cap (not all steakhouses have this)
All the dishes were delicious especially the Cacio E Pepe. I love the char on the Rib Cap and the flavors and texture of the fried Mozarella was awesome. In addition, the bread service is great. IDK what they mix with the spread but I loved the olive oil with garlic mixture.
