Tucked on the corner of a brick-lined street that feels like it was ripped out of a movie set, Jefferson’s is the kind of bar that doesn’t scream for your attention—but once you step inside, it quietly earns your loyalty. I ended up there on a random Thursday night, following a friend’s half-hearted recommendation. I walked in expecting your standard bar experience. I walked out texting three people, “You have to check this place out.”
Let me start with the atmosphere. Jefferson’s has that warm, amber-toned lighting that makes everyone look good and everything feel like it’s happening in soft focus. Dark wood tables, a copper-accented bar, shelves of whiskey bottles that stretch so high you’d swear they need a library ladder—it’s the kind of place where every corner seems Instagram-worthy but without trying too hard. There’s a low hum of conversation, clinks of glass, and jazz-funk playing just loud enough to give the room a pulse.
But bars live and die by more than their lighting and soundtrack. Let’s talk service. Or more specifically, let’s talk about Zoey.
Now, if you’ve ever been to a bar and felt like just another glass to fill or order to punch in, you’ll understand why Zoey stood out. She was a total pro with a genuine spark—the kind of server who actually seems like she wants to be there, not like she’s surviving her shift. She greeted us with a laugh, asked if we were “drinking to forget or celebrating something,” and then offered a whiskey recommendation that matched our answer. She was funny without being fake, attentive without hovering, and somehow managed to make the bar feel like it was her living room and we were old friends dropping by.
She sold us on the signature Old Fashioned, and I swear to you, that drink might have been a religious experience. Jefferson’s doesn’t mess around with its cocktails. There’s a respect for craft here—not in a snobby “we only use locally-sourced air” kind of way, but more in the sense that they know their stuff and enjoy sharing it. The Old Fashioned was balanced perfectly: smoky, just sweet enough, with a burnt orange twist that made each sip linger in the best way. My friend ordered a bourbon flight, and Zoey walked him through each pour with the kind of knowledge that never felt rehearsed.
We also ordered food, thinking we’d pick at some fries to soak up the drinks, but ended up practically licking the plates clean. The menu is small but mighty. We got the truffle fries (absolutely criminal how good they are), a bourbon-glazed burger that had me temporarily blacking out with happiness, and some fried pickles that had the perfect crunch-to-juice ratio. I didn’t expect bar food to hit that hard, but Jefferson’s clearly doesn’t believe in cutting corners—even in the kitchen.
The crowd was a mix of neighborhood regulars, first-timers like us, and a few couples who looked like they’d picked this as a first-date spot—and honestly, I get why. It’s cozy without being cramped, stylish without being intimidating. You can go there to unwind after work, or stay into the late hours swapping stories with strangers. There’s a sort of unspoken camaraderie in the air, like everyone’s collectively agreed to chill out and enjoy the night.
Zoey came back toward the end of the night and asked if we were “ready to level up or call it wise,” which might be my new favorite way to ask if you want another drink. We chose to level up, of course—how could we not? She brought over something she called a “Dealer’s Choice” cocktail—no spoilers, but let’s just say if you’re ever at Jefferson’s and trust your bartender, ask for it. It was smooth, creative, and surprising—much like the night itself.

First time we went it was awesome. Great service, food, and beer. The server was incredibly good, super friendly, and really great with kids. Patient as they asked her questions about the dollars on the walls. It was moderately busy as well.
There are a ton of sauce choices!! Kinda of wish they had the option to try some so you can get a better idea of what each one is like. I wasn't impressed by the "spicy" garlic parmesan. It wasn't super flavorful, and definitely not spicy at all.
Second time we went they were completely out of Mac and cheese! Which is a big item on their menu, so that kinda sucked. (Because the Mac and cheese is delicious) The server was not super friendly either. They were not busy at all during this time.

Also, much easier to get seated and actually hear the people around you, unlike the downtown location. Which is also awesome, don't get me wrong, but downtown is always booming, whereas Wakarusa is more calm.

Some areas of restaurant is pretty dusty and I wouldn't touch the dirty dollars hanging over my food, however the bathrooms where pretty clean! The taste of the fried food blends in together making it hard to distinguish tastes between foods, (example: Applewood bacon, which much like burgers really shines on a fresh flat top in terms of flavor) yet the food isn't too greasy or clumpy leaving me to believe they change out the oils frequently! (You'd be surprised how many places don't.) Try swapping out the fries they really aren't the special. Jeffersons branded ketchup really stood out to me, nothing over the top, but it looks well.
