Thanks for ruining my evening with what you call a pizza. I read all the great reviews and raves, checked out your instagram and even stared the awards you’ve been given at your entrance. I ordered a magaherita pizza with chicken. I paid for the chicken to be added, I’ve worked in the restaurant industry for over 16 years and that was not even up to 3 ounces of chicken. Ok..no problem, I get the pizza and I took a bite and it’s burnt. I think to myself, okay I might have pick a burnt piece. About 10 mins later, I try two more and they are also burnt. I call to ask, and they say bring it in; after contemplating. I had already previously called to ask why the pizza was burnt, the manager says to come in. I eventually agree to bring it in then I am told that the pizza has something called “leoparding” and it is fully cooked. Again…wow…I’ve had thousands of pizza in my life and this is what is they fully cooked. Again, I am disappointed because that was the worst pizza I’ve spent my money on. The manager was accommodating, but let me know that they would not replace the pizza I agreed to pay additional for because of “leoparding”. Sad..this was my first and last time there, I am from out of town and this ruined my experience. I was truly excited to try it and waited all day after my project to try it. If you want normal pizza that does not have its crust burnt from being in a wood oven stay away. I have had wood fire pizza even at other establishments but this was horrible....

Wood Fired Pizza in general is always tasty. Personal 12in pizzas are becoming very popular and small strip mall locations. And build your own pizzas are the highlights of these small shops. But that is my frustration with Bricks. There are a lot of other options that offer the same thing, often for less money. The chain in Chicago, Blaze, is popularizing this concept. Nearby Olive Theory is one of those offering similar customizations... but for less cost.
The challenge bricks has to overcome is charging for each ingredient atop a basic cheese pizza. Just with a three topping pizza, you're walking out around $15. Where a even a dozen toppings on a pizza at competitors still remains under $10. With low barriers to entry in this restaurant type, one can only command a prestige price with a premium product.
The quality of ingredients can be argued as the differentiator. My $15 only allowed for 3 toppings, so I can't speak to all of the options. I ordered a prochutto, olive oil white, smoked gouda cheese, roasted garlic pizza, and to my disappointment, it was raw garlic not roasted. So the product didn't seem any more premium over nearby competitors.
For me, the food was good, the spot has potential. But with a tough to find location, high prices, and missed orders, I'm guessing Bricks will...
Read moreI recently ordered takeout from Billy Bricks Wood Fired Pizza and was blown away by the quality of the food and the variety of options. Being a vegetarian, it’s often difficult to find a pizza place that has a variety of options I can eat besides the regular margherita or cheese pizza. So when I stumbled upon Bricks, I was instantly intrigued. After taking way too long deciding between the numerous calzones and pizzas, I ended up ordering the spinach & artichoke dip and the very veggie pizza. Both the dip and the pizza were mouthwatering and hit the spot. The dip was served with a healthy portion of garlic bread which was well seasoned and baked well. The dip was tangy and creamy and paired well with the bread. I was very tempted to eat the whole thing myself. The pizza was my favorite! Loaded with veggies, pesto, and cheese, this pizza was remarkable. The vegetables were cooked thoroughly and the house blend of cheese was a nice complement.
