I recently had the opportunity to visit Santa Fe 2.0 Restaurant, and while it offered a classic old school New Mexico diner vibe, my overall experience left me with mixed feelings.
Let's start with the positive aspects. The restaurant's ambiance successfully transported me to a bygone era with its nostalgic decor and traditional diner feel. It was a delightful step back in time, which added a unique touch to the dining experience.
Now, let's move on to the food. I ordered the breakfast burrito, a staple in Santa Fe cuisine. While it was decent overall, it failed to leave a lasting impression. The flavors were average at best, lacking the depth and complexity I expected from a renowned dish like this. I found the taste to be somewhat one-dimensional, missing the vibrant and authentic elements that make Santa Fe cuisine so special.
One particular letdown was the pork green chili, an integral component of a traditional Santa Fe breakfast burrito. Unfortunately, the green chili failed to meet my expectations. We went again today and the wait staff is still not wearing masks. On the tables had nine none family at one table close beside each other. It is a shame because they are a nice place to go, but simply do not follow the Boulder County safety guidelines for Covid-ID. A few weeks ago we purchased take out from the Santa Fe Coffee and Burrito Company. As we were waiting for our food to be brought to our car we observed two people that came out together about two foot from each other facing each other and laughing. I thought it might be a couple. She then left the man and gave us out delivery. I called the owner and told him I thought it was poor practice to have the food handlers not wear masks when handling the food. We gave it a few weeks and tried them again this week, and again the food handler was not wearing a mask and often close to others. I realize that this does not bother all people, but I think it is a poor practice and will not be returning. Please understand the food is great, reasonably and the employees are very friendly. I just wish for a short time they would take the pandemic a little more seriously, especially for the older customers. If I find in the future that they have improved their policy I would happily...

Obviously, I'm from NM. The land, the STATE, that invented the dang breakfast burrito (Look it up). So when I had been told that this place had New Mexico level breakfast burrito's, HO BOY was I excited.
Nothing is quite as disappointing as biting into a skinny, bland, ridiculous excuse of a burrito that is a staple of nearly every restaurant in Colorado. I won't mention any names cough Santiago's cough. Anyway, back to this burrito. It had some heft to it. It's a one and done burrito like a breakfast burrito should be. Perfectly cooked eggs, good bacon, the potatoes were nothing special but they didn't take away from it. There was a distinct lack of any internal chili and that is where many fail. Even when they don't fail though, they don't do it right.
CHOPPED ROASTED GREEN CHILE! That's what goes in a "NEW MEXICO" breakfast burrito. Not this green chile stew they slather every burrito in, chopped. roasted. green chilies.
It's still a great burrito though, far better than you will find from a majority of burrito peddlers here in Colorado.
