Exquisite!!! This restaurant it’s incredible from the decoration, service, food, and experience. I want to start by saying Simon thank you so much for the wonderful service and treatment that you gave my grandmother and I. Drinks la Chita comes in a bird from glass with hints of pineapple and rum it was sweet but you still taste the liquor, Callao de oro it comes in a gold pineapple that they flip the top and put the cup on top of it just wonderful presentation this one it is a little bitter but it was good, Amazonas it was similar to el Callao de oro bitter with hints of fruits. Appetizers las croquetas de aji de gallinas were so tasty warm very flavorful with this sauce that complemented them to make this bomb of flavor in your mouth, conchas a la parmesana scallops with a sauce and melted cheese just yummy and delicious, empanadas de lomo salteado they were filled from one end to the other with this meat and cheese that just melted in your mouth seasoned to perfection, maki acevichado I love sushi but I was not a big fan of this one it was a weird combination with the white sauce that I don’t think it went well with the tuna, el trio de ceviche el clasico it was good fish shrimps with onions cilantro very fresh no to bitter from the lime either, ceviche carretillero it was not my favorite the fish was good but the leche the Tigre sauce I was not a fan of the taste it was like a fight with the lime, el de aji amarillo was delectable spicy but not to spicy with very fresh fish, shrimps and octopus. Main dishes el risotto a la huancaima was delish the short ribs was so tender with perfectly cooked risotto with all of this sauces that combine to perfection it was succulent! Ribeye was also good they bring this butter and put on top gives it so much flavor big piece of meat. Desserts las texturas de chocolate I want to say I liked it but I didn’t it has this weird mint flavor that I did not enjoyed it, if you like mint and chocolate this is for you but I don’t like mint. Simon was great waiter I was never out of water, he would let us try the food a few mins before he would come and asked us if everything was okay with all the food, Jose the manager was very professional and pleasant when he came to asked how was everything. He was knowledgeable, attentive, and passionate about the menu, offering excellent recommendations and making us feel genuinely welcome.

Pisco Peruvian Gastrobar offers one of the most memorable fusion dining experiences I’ve had in Central Florida. It blends Peruvian tradition with Japanese precision and creativity, and the result is as delicious as it is unexpected. Service was exceptional—our server, Jonathan, went above and beyond with thoughtful explanations and spot-on recommendations.

We started with the Maki Amazónico, which immediately set the tone. A roll with salmon, crab salad, avocado, cream cheese, topped with sweet plantains, spicy mayo, crispy wonton, and eel sauce—it sounds like a lot, but it came together beautifully. Sweet, spicy, crispy, creamy—every bite had a little something different. My Peruvian wife, who usually leans traditional when it comes to Peruvian cuisine, was just as impressed. Despite being a major departure from the flavors of home, she found it mouthwateringly good and loved how the textures played together.

For entrees, we split two incredible dishes. The Ceviche de Ají Amarillo was a vibrant, citrusy mix of fresh fish, shrimp, calamari, and octopus, all swimming in a creamy, spicy leche de tigre that packed both brightness and heat. The charred sweet potatoes on the side were a brilliant contrast, earthy and slightly caramelized. This was one of the most confidently seasoned ceviches I’ve had—and again, my wife was amazed at how well the creative flourishes still honored the soul of the dish.

The Wagyu Saltado was the heartier of the two—tender slices of Wagyu beef, sautéed with soy, tomatoes, and onions, served with roasted Peruvian yellow potatoes and jasmine rice. It was savory, slightly sweet, and deeply comforting, with just enough finesse to elevate it beyond the usual lomo saltado.

Pisco is doing something genuinely special—reinterpreting classic Peruvian dishes without losing their essence. For a fusion menu to win over both a curious diner and someone raised on the originals says a lot. We’ll...
