Tried Bamba Eggroll Co for the first time today at the Louisville Convention Center and really enjoyed it! We tried to wait for lunch until the lines shortened but the people just kept coming. By the time we got down to the truck, many of the menu items were sold out which was a bummer but was due to us waiting until later in the afternoon to eat. Service was quick and very friendly. I tried 2 of the vegetable lumpia (eggroll) and they were great! A friend tried the buffalo chicken and crab rangoon lumpias also and was very impressed. I also tried the veggie caldera stew and it was a great way to warm up on such a cold day. The stew was seasoned well and had a great variety of vegetables in it. Loved the peppers for texture and shrimp was deveined so no sand to run texture or taste. The meat was a little chewy but seasoned well great bite and definitely worth the 10 dollars.
