I stopped in last week for a quick bite after realizing I didnt pack any kind of actual lunch for a long drive which was followed by a cancer related surgery consultation and then another long drive. I was starving, emotionally distraught, not in my usual stomping grounds, and in desperate need of a place that sells a little more for people with Celiac disease than a measly salad: where they'll just take the croutons off and serve it to you cross contamination and all. Many restaurants and cafes do claim they cater to us but actually lead to more damage than good, because they don't take celiac disease seriously nor do they actually care to.
WELL NOT THIS PLACE BABY CAUSE THE OWNER IS ALSO CELIAC DISEASE HOMIE AND UNDERSTANDS WHAT THE PEOPLE WANT!
When I walked in the fresh smell of baked goods flooded my nose and then eventually my eyeballs almost started flooding too because babe.. THE OPTIONSSS 🥹 It didnt look like a hole in the wall, the food looked REAL and FRESH, and I didnt feel pressured to just order something to please normal people around me because this place was designed for people just like me!
It felt normal for once which is a feeling I never thought I'd feel stepping into any restaurant or cafe. I felt like I could stop holding my breath while trying to scan the area for possible contaminants because they take cross contamination very very seriously and do not even have gluten near the site.
We ended up almost ordering the whole store and I felt so bad but when you find a spot like this as someone with celiac disease you kinda have to bask it all in because its just so rare for us. I came in so sad tears in my eyes just simply wanting a bagel with cream cheese as a comfort meal and left with so many yummy snacks that lasted us a few days. Then we met the owner and he gave us free biscotti which was truly just the icing on top of the cake (no pun intended)
Might I just add that even untoasted that was the best bagel I've ever had in my life (see how I didnt put gluten free? It tops even the regular ones from my distant memory)
Today I had my surgery to remove the cancer from my leg and I really was emotionally drained and a little anxious about life ahead now with this new diagnosis. My husband surprised me by driving me right to Dishon's and went in and nabbed some goodies for me while I waited in the truck. I immediately just felt so seen and a million times better.
I've always had to bake things from scratch my self if I truly wanted to have a stress free and delicious sweet treat. While I'm not able to be on my feet and bake for hours to get my mind off things, Im glad I have a place like Dishon's Bakery to fall back on.
When you have an autoimmune disease like celiac disease it truly is little things like just being able to enjoy your favorite foods during a rough time that can make a world of a difference for us. It seems dramatic but if you dont wear the shoes you really dont know how bad feeling so unseen and casted away by the world affects us in our day to day life
This place is more than just a bakery, Dishon's bakery is helping people with celiac disease feel a sense of normality in a world who constantly leaves us behind. Whether its something as simple as a slice of pizza after life changing surgery this bakery is certainly a community blessing in disguise ❤️

Read moreHighly recommend Dishon bakery. Whether you’re gluten free or not definitely go check it out. I have Celiac but my fiancé who does not have a gluten dietary restriction has fallen in love with their bread as well and has some every morning with breakfast. Their bread has great taste and texture and doesn’t fall apart like most gluten free breads when making/eating a sandwich. We keep ours in the freezer and just take out the slices we want and pop them in the toaster oven to warm or fully toast. I do recommend having the bread sliced there if you don’t have a good bread slicer/knife at home. Aside from the breads they also offer delicious bagels, baguettes, and sometimes have some fresh sweets. They also partner with local gluten free vendors and have packaged products like local honey, crackers, etc on the shelves and some goodies in the freezer (including some of their bread). The blueberry scone and lemon bread were my top favorite sweet treats. And the breads are out of this world! The boule bread was an amazing side to an Italian dinner; the sandwich bread has made me the best grilled cheeses I’ve ever made! I have even been snacking on the breads plain and not toasted - something I have never done with a GF bread. It’s that good! My husband (who does not need to eat GF) even agreed they are deliciously tasty breads that you would not even know are GF.
I have been eating GF for 10+ years now due to celiac, and I am so happy to have found a local bakery dedicated to making delicious GF goods. It feels amazing to have somewhere you know that you can trust takes your food allergy seriously, and makes quality products.
