Vim Thai — Restaurant in Medford

My friend and I were passing through Ashland and decided to stop for some Thai food. But they were having a big community function so we kept going on the Pacific highway and ended up in Medford at this place. There was one other party in the restaurant besides us. The server took our orders and brought our beers promptly. We had asked for chicken satay as an appetizer before our main food arrived. Instead, the server brought one of our main plates and the chicken satay. It was probably 10 minutes later when the other main plate arrived. The chicken satay was seasoned correctly but it was very dry like it had been sitting. Both the main dishes that we ordered tasted good. The server never came back to see if our food was okay. Only much later to ask if we needed another drink. The restaurant itself is very dated. Both to cook that we could see and the server spent a lot of time talking to each other when they could have done checking on...

I was a little skeptical of this place since it re-opened, assuming in the back of my mind that they likely just reopened the same place but with a coat of paint and a new sign. So happy to be wrong. On similar lines, I feel like a lot of local Thai places have sortof lost their touch in terms of flavor, portions, and service... thankfully, it really seems the food preparation got a good overhaul as well. Going in to pick it up, the ambiance was really nice, and the staff seemed genuinely enthused and inviting... weird, right? We'd ordered a total of 5 dishes and were pleased with all of them (even if a couple did burn our mouths a little) . It was a pick up order so some of them were packaged a little differently (so we didn't end up with a bunch of beef juice all over the car), but everything seemed fresh and flavorful once we got it all set up. Pretty sure this will be my new go-to for the nights I'm avoiding...
