It’s been almost 2 weeks since I visited Eve La Cubanitas food truck, and I’m sorry it took me this long Eve, but here it is.
I travel A LOT for work and I eat all of the country and world for that matter. In regards to Cuban food when I don’t feel like cooking it I used to drive an hour towards Orlando to get it; because honestly most of the Cuban food here in Brevard County is par or forgettable at best. That is until I discovered this Cubanitas food truck .
When reaching the truck you can she’s cooking with spirit and love which translates into her food. I ordered a Cuban Sandwich, some ham croquetas and a classic Iron Beer soda to wash it all down with.
The Cuban Sandwich : The bread was pressed perfect very toasty and buttery great crunch, fantastically flavorful pork you can taste all the flavors she used and her marinade is perfection, the Bolo ham slices were of good quality the Swiss cheese pull was insane and delicious, perfect amount of mustard everything very well balanced and surprisingly the sandwich was heavier in hand than I expected which made me believe before unwrapping it that this sandwich meant business lol
The Plantain Chips : I didn’t know the sandwich came with them, but let me tell you these little chips were the bomb dot com. I would visit the truck just to buy these too. Cooked to perfection, very flavorful very fresh, you’ll crave them later in the day lol
The Ham Croquetas : A guilty pleasure of mine lol Eves’ croquets were good. The exterior was cooked to a beautiful golden brown with great crisp, the ham filling was nice and thick, she gives you a little lime wedge which brings out a brightness in the flavors. Personally I’d love to taste more ham, but the filling was excellent.
Iron Beer Soda : A childhood favorite of mine; it’s like a carribean version of Dr. Pepper, island spices maybe some fruit flavors some caramel give it a try you’ll love it.
I enjoyed the food from this truck so much that I purchased four more sandwiches and croquetas to take home and share with not only the rest of my family, but to my friends while they were at work running their local business. Days later I would get messages from them all asking where was Eve La Cubanitas food truck located.
I had the pleasure of enjoying a cafecito while having my lunch which was amazing and meeting Eves mom who is a beautiful person as well.
This is my new spot ‼️ Eve also hosts a street party so to speak at her location the last Friday of every month, I cannot wait to make one of those events.

Best Cuban food I’ve had in the Palm Bay/Melbourne area. Pictured are papas locas which are crazy fries loaded with cheese, bacon, and slow roasted pork. Served with a spicy (not too hot) mayo sauce and a cilantro sauce. Very flavorful and loaded with meat, great shareable appetizer. Next is a plate that I tried all the appetizers - shown is beef empanada, papa rellena with beef, yuca rellena with beef, and 2 ham and cheese croquetas. All items were fried to perfect, very crispy outside and tender, flavorful, moist fillings. Oil tasted very fresh (many places do not change their oil often enough, however, this was not at all the case for this restaurant). The last 2 photos are the Cuban sandwich and the Miami sandwich. Both are humongous and constructed very well. Bread is pressed perfectly, ratios of meat to cheese, pickles etc were great. Not pictured because I ate it too quickly was the homemade bread pudding. The texture was great and the flavor profile really highlighted the raisin (which I like). I would definitely get it again! All in all, this place is awesome and Eve the owner is extremely welcoming, nice, and knows what she is doing. If you’re near Indialantic beach give this place a shot, you won’t regret it.

I can't say enough good things about this food truck—every bite was a taste of Cuba! The lechón asado was perfectly seasoned, tender, and juicy, with that amazing crispy skin. The Cubano sandwich was hands-down the best I’ve had outside of Miami—crispy bread, melty cheese, and just the right balance of pork, ham, and pickles.
The ropa vieja was rich and flavorful, and the maduros (sweet plantains) were caramelized to perfection. Don’t even get me started on the empanadas—flaky, golden, and stuffed with delicious fillings.
The service was fantastic—friendly, quick, and full of passion for their food. The portions were generous, and everything tasted fresh and authentic. The mojo sauce and garlic cilantro sauce were the perfect finishing touches.
If you’re craving real Cuban cuisine with bold flavors and a homemade touch, this is THE place to go. I’ll definitely be back for more!...
