I feel that as a homegrown citizen of the Garden State, that is my duty to write this review... to back up that statement I’d like to quote this article from Food & Wine magazine’s articles from last year on the best pizza in America.
“New Jersey is the best place to eat pizza in the country right now. The state is one in an elite group remaining true to their heritage, through long periods of time when others were too busy crashing ahead into the future to care about theirs. Imagine, if you will, what New York's pizza culture might look like, forced to exist outside of the spotlight, without the world beating a path to its door—that's New Jersey, working hard, very often without the interruption of sustained attention, mostly serving a very local clientele that will have no trouble holding them accountable.”
So now I shall hold Canyon Pizza Co.’s accountability as risky at best.
I arrived this evening asking for by the slice, prepared to sample a variety of flavors. The teenager at the register said to talk to her boss when I was informed of complete lack of by the slice. The gentleman (using this word graciously out of politeness) was extremely rude when I asked why. With a pompous attitude he replied stating how they value their quality and that a pizza has 12 slices and I should buy a whole one. Meanwhile, looking behind him, I see mildly trained teenagers assembling pizza like a burrito at chipotle. I should have just left at that point, but there’s been a lot of hype in the community about this place recently and I wanted to give it a go.
After looking at the menu, seeing a variety of over-topping options, I opted for a traditional margherita pie. Traditionally served on a thin crust with a bubbly edge topped with fresh basil, crushed San Marzano tomatoes, fresh sliced mozzarella, and a drizzle of extra virgin olive oil. What I received was an attempt at a Neapolitan style pie, the basil and mozzarella were there, the tomatoes were replaced with a cheap tomato sauce, not even pizza sauce. The crust was 3/4” think, the crust has no bubbles, and was covered with a variety chopped cherry tomatoes.
If this place attempted to open in NJ, it wouldn’t last a week.
I’m okay with the manager being rude, as long as he’s flipping a stretched crust over his head while doing so, not acting like the king of high school. I’m not okay with a projection of self entitled quality, that was followed up with beyond subpar flavors, construction and presentation. I understand why they don’t sell by the slice, this “pizza” wouldn’t work well reheated with how thick and poorly assembled it is.
I’ll continue to drive to Fruita to get a few slices and a beer served by friendly people.

Noticed how many fake 5 star reviews have been blasted since posting mine. Avoid this place at all costs if they can't even be transparent or take constructive criticism. word of mouth spreads quickly in this town and i'll be talking about this place a lot, mostly on where else to go.Excited to have something better...

I saw that someone opened my message. However, I was never contacted. There are too many good restaurants in Moab to waste your money on subpar food at this restaurant where it is obvious the owners do not care about the satisfaction of their customers or the quality of the food they serve. —————————————————————— My husband and I arrived in Moab on a Saturday evening at 6:30 after a 6 hour drive. After getting partially settled into a hotel, we researched some nearby restaurants for dinner. We decided on Canyon Pizza Co. for pizza because it was close and the reviews were pretty good overall. We ordered a 12 inch vegetable pizza and a mediterranean salad. All was ready in 15 minutes. We got it as a take out. We had planned to eat at the restaurant but all of the small tables had the chairs stacked up. It appeared the only place to sit was at the long community tables. The salad was very good. When we started eating the pizza, we realized the crust was not done. It was doughy making it like eating raw dough. My husband took it back. He arrived around 8:15 to find out they closed at 8:00. The employees were still there cleaning. A man, I am guessing the manager, let my husband inside. He told my husband he could not refund our money to our credit card because the cash registers had been closed out and he could not make a new pizza because everything was put away and the ovens were shut down. When my husband told him we had no access to an oven to bake the pizza longer, the manager started up an oven and ran our pizza through again. This slightly charred the top of the crust. The crust was still somewhat doughy. We had to eat it because by that time, it was 8:30, we had not eaten since lunch and it was too late to start looking for a other place in Moab to get dinner. Under the circumstances, it seems the manager could have offered us some sort of compensation for the pizza that was not prepared correctly. This was not the best way to start our week stay in Moab. Read moreWas just in Moab on a dino-trip with my 5 year old and tried Canyon Pizza. Looked like they'd only been open a few day because there were some "new to the restaurant business" faces behind the counter and lots of staff. Our pizzas were well made, with quality ingredients and some original topping combos which even if they're not your thing, is always cool to see. Loved the fact I could get a 8" personal pizza, way better than by the slice sitting around in a warming cabinet waiting for takers. I get Hot and Ready, but i like pizza and salad made when i order it. My salad was only $8 or so and it could have fed two adults as a side, or would have made a solid lunch. Generous with a decent dressing too! Nice to see baby whole leaf, spinach and a decent pre cooked chicken breast rather than chicken mush. After we ate our pizzas a younger employee, Silver came to the table and asked how everything was. You could tell he was pretty new to restaurants and wasn't super comfortable with talking to strangers but he got out of his comfort zone and cared whether our meal was good....and that made my night. (and he made the difference between 4 and 5 stars)
We left with a couple of left over slices, and a quart of ice cream made in Santaquin that was solid quality for only $5!!!. I can't find that value at a grocery store.
Only small gripes here...I couldn't even with the menu board at first so i felt like i was taking way too long at the register, and beer would have been cool. Other than that...thanks for doing something...
