Josefina’s Taqueria (Taco Truck) — Restaurant in Mount Shasta

We ordered the Cali Fries, Al Pastor Tacos (just keeping it light), and the chicken quesadilla. Everything was fresh, flavorful, and hit the spot. The Cali Fries were loaded just right, and the tacos and quesadilla were solid. No complaints on the food.

They were out of Jamaica, which was a bit of a letdown. If something that simple and popular is constantly running out, it’s worth keeping better inventory. Jamaica is one of those staple drinks people expect at a taco truck—it’s refreshing and completes the meal. If customers keep asking for it, it’s a sign to stock more and avoid running out daily.

Another thing to note—there was no shaded area to sit or even stand while ordering. Other reviews mentioned some type of shade or cover, but when we went, there wasn’t any. We ended up eating in the car. Honestly, if there was a place to sit, we probably would’ve ordered more.

If this is a growing food truck business with multiple locations, here are some recommendations to level up the customer experience:

The absolute BEST Al Pastor burrito I’ve ever had in my life. I had to come back after I was done eating buy something else just to give them more business and enjoy the awesomeness. You can’t be disappointed here, the meat is flavored perfectly and cut perfectly and everything is super fresh. I’m sad they only have one location in Mt. Shasta and I hope they expand open something up in Redding too...
