My wife and I went to Pho Cafe in Mukilteo for a late lunch today. I had Phở Tái, and my wife had Bún Bò Huế. My Phở Tái was really good, and the broth was very tasty. It also had a lot of lean rare shaved beef in it. My wife said that her Bun Bo Hue was ok, but not spectacular. My wife is from Vietnam and knows what authentic Vietnamese cuisine should taste like. She’s a little picky when it comes to Vietnamese food, but she is a fair judge of it. She did like my meal.

Our meal took a bit longer than normal to come out so our waitress offered us free egg rolls for the inconvenience. The egg rolls were really good also (nice and crispy on the outside and the filling was delicious). My wife ordered Chè ba màu for desert, and she said that it was very good. I had Cà Phê Sữa Đá and it was really good also.

Overall we enjoyed our meal and would come back again. They were a little busy, and because they just opened, I think that they are still working out a few things with the service and flavors of the food. The employees at Pho Cafe were all very friendly and eager to make the experience there good. I believe that they will get everything running well very soon, and my wife and I look forward to visiting again and leaving a five star review next time. I was here on their 3rd day open, we ordered the fried egg rolls, salad spring rolls, vermicelli noodles with pork, prawns and egg roll, as well as a large pho with meatballs, rare steak and brisket. Everything we ordered was delicious! The egg rolls were nicely crispy and had lots of savory filling. The pho had a great umami flavor and the pork and prawns on the vermicelli noodles were lovely! I am so happy this place opened as it is super close to my home and Vietnamese food is my favorite. My only negative critique is the nuoc cham sauce for the vermicelli seemed to lack flavor and seemed watered down. Could have been more fish sauce and chili and sugar in it.

Updated* I just ordered two pork banh mi and I am disappointed to say they were really lacking filling and were mostly kinda stale baguette there were several bites with no filling at all, very little veggies and lots of thick bread. Hoping they will use this feedback to make adjustments as I know they just started serving Banh mi. Hoping to see fresh bread, more meat and more veggies...

First Pho place I've been to that I would never go back to. I have been on a Pho lunch diet for about 2 months now and have lost about 9 lbs. As a truck driver I go to many different Pho locations. This was the first time I've ever been to one that I would not go back to. First of all the regular Pho is extremely tiny. You get half the amount of sprouts anywhere else gives you. You get half the amount of Basil anywhere else gives you. And you get a little cereal bowl. Look at the pictures compared to the size of my hand. I ate it in less than 10 minutes. The broth was more like tea. Hot flavored water. I added a bunch of hoisin sauce to try and give it some flavor. Two great big grissley chunks of fat in with my brisket. I've never been upset for trying out a place until today. And it was $14, which is normal for a regular size serving at another pho restaurant but you get $14 worth, here you get about $9-10 worth. For those who enjoy 4-star to 5-star level heat, the Bun Bo Hue here is the gold standard for the region. The broth is exquisitely balanced and complex with herbs and savory proteins. The noodles are medium-firm and chewy. And, don't forget to request chili oil-- turn up the spice level to unlock the cascade of flavors. The chilis are not the hottest ever; they are present only to complement and elevate the components within the broth. Diners could enjoy this without the spicy chili oil but the enjoyment is not the same. Fyi-- bun bo hue is not on the regular menu so call ahead (mostly on weekends). Regulars say the pho dac biet (combination pho) and chicken banh mi are highly recommended. Will be back again.
