I usually go to another place further north for Bánh mì, but I chose to stay closer to my job and try out a new place -- that's where Indochine came into play. For an early-evening dinner, I was thoroughly impressed with what I had at Indochine at a reasonable price. Indochine was one of those restaurants squeezed in a busy city street that could have easily been missed unless one searches for Phở, Bánh mì or certain other Vietnamese staple dishes in or near New Brunswick.
For the dinner with myself, I started off with Pork Chả giò and had a "Traditional" Bánh mì (paired with a combo of fries and a drink.) The Chả giò was well made and cleanly paired with the lettuce wrap, cilantro and Nước chấm (dipping sauce) -- very simple and a delicious starter ($5.95 for 4 pieces.) The "Traditional" Bánh mì, a Vietnamese baguette sandwich generously stuffed with pork roll, ham, pâté, mayo, cucumber, jalapeño, cilantro, pickled radish and carrot, was very flavourful (and probably would be spicy to the unsuspecting if they do not read the menu properly.) The accents of the savoury and spicy Vietnamese iconic sandwich surely present themselves well here and earn more of the "Authentic" title -- there are many more variants of this sandwich that this shop has yet to offer, but this is surely more of a welcome to authentic taste. The fries used in the combination pairing were the crispy fries (good choice with the sandwich) and a drink is included (around $10.25 after $2.00 combo addition.)
Inside on a Wednesday early evening (say 18:00,) the restaurant was very quiet with more takeout customers than dine-in. The two staff working the front were very relaxed. The atmosphere was more western-modern and the sit down-casual dining style was neutral/pleasant. The interior is well-maintained and clean.

The service was quite disappointing, yet the pho they serve is truly delicious but atmosphere made it not joyable. This place is absolutely fantastic when it comes to dining in the New Brunswick area! The dish I had was meticulously crafted, and the broth was simply divine, with a delightful mix of vegetables and tofu. The serving size was more than generous, and the prices were quite reasonable. The summer roll was a burst of flavors, and the peanut sauce had a unique twist compared to other Vietnamese eateries. Our server was incredibly welcoming, adding to the overall positive experience. The rice was cold, and had to be reheated by the kitchen. There was almost no sauce on any of these dishes, making them rather dry. One of the rice noodle dishes had luke-warm noodles, which were flexible and apparently prepared more recently. The other portion; however, was refrigerator-cold, and the noodles were stiff and dried out, making them very unpleasant to eat.
