This new Vietnamese fusion restaurant located in the heart of Bensonhurst serves simple but delicious pho! This is my first time seeing a Vietnamese restaurant have an open kitchen concept. I think the idea isn't bad at all!
I had order a Set A and there was a choice of appetizers (I.e., spring roll, summer roll, and gyoza), choice of drink, and the house special pho. I went with summer roll and passion fruit yogurt soda! While my brother ordered a Thai iced tea.
The summer rolls (3 rolls) were tasty and crunchy, the meat fillings and the wrapping are different from other Vietnamese in Brooklyn and the city. They used normal spring roll wraps. The size of the rolls were longer than normal Vietnamese restaurants. I would call these summer rolls as a fusion of Chinese and Vietnamese. I enjoyed the fish sauce they made. It tasted light with a hint of sweetness and some tartness.
The passionfruit yogurt soda was very tasty so don't finish it in one gulp! The sweetness of the drink alongside with the tartness of the passionfruit was yummy, and the yogurt and soda made it a smooth fizzy drink. The drink tasted better than most boba places around the area!
The Thai iced tea was good too it was just a little too sweet. If the sweetness was cut back a little bit more it can be a great Thai iced tea in Bensonhurst.
The house special pho came in a big bowl. The soup tasted homemade and light. Best thing is that it doesn't get salty as you eat. The broth flavor is fine but I feel there could be more. There was also a good amount of brisket! Meat lovers would love this! The beef tendon was cooked just right where it is gelatinous but not melting! The beef tripe was quite long and it needs to be cut to shorter pieces. They also have beansprouts , lime and jalapeño slices.
The service was good. Everyone was very polite and they make sure you're enjoying the food.

The suggestion I told them regarding the tripe was heard and followed. The fish sauce for the spring roll has improved. I can taste the pungency of the fish sauce and the taste of the garlic was more pronounced. I like their decision on how they package the pho takeout. Their choice of rice noodle is immaculate. The noodle doesn’t get super soggy in the soup. It came intact even inside the packaging. I have seen a fair share of local pho places package their noodle and it just clump into a cube, and when you put them into the pho soup it just don’t separate (just broken small pieces of noodle). The noodle they use does separate!

Immediately greeted and offered for my friend and I take any available seat and provided us with the two menus - one food menu and one beverage menu.
The beverage menu is simple: 3 choices each of either; A coffee drink A Boba Tea A Smoothie A Specialty Soda
The food menu is very minimal, focusing on: 3 pho options 3 vietnamese sandwiches options, 3 appetizer options 1 Vietnamese vermicelli noodles dish 1 Vietnamese vermicelli/rice combo dish
You can order those individually, or you can get a good deal by choosing one of two sets:
Set A; 1 appetizer, 1 pho, 1 beverage Set B: 1 appetizer, 1 sandwich, 1 beverage
My friend and I both chose Set B. I got the grilled chicken bahn mi sandwich, the gyoza and a brown sugar milk tea with boba.
My friend got the grilled pork bahn mi, the spring rolls and a Thai milk tea with boba.
My sandwich was excellent - the bread was fresh, the amount of chicken was great, the shredded pickled vegetables were really delicious and the amount of mayo inside was just right for me.
The sandwich was served with some jalapeños on side for you to choose how much, if any you wanted to add. The table has sriracha sauce, as well.
The gyoza were great, just the right blend of soft in the middle and crispy at the edges.
The brown sugar milk tea was surprisingly on par with the ones you get at a dedicated bubble tea shop. I loved it!
My friend enjoyed his food and drink, as well.
The service was excellent and quick. The restaurant was very clean and neat. The staff were all attentive and super polite.
We got to meet one of the owners (super friendly) and he told us a little about what makes the food stand out (fresh custom baked bread locally sourced, a custom pho broth recipe with much less salt, etc) and how keeping the menu very simple ensures that they can focus on perfecting their dishes.
Prices are very good. Each person can choose either Set A ($24.95) and get a humongous bowl of pho, an appetizer and a special drink - or choose Set B ($18.95) and get the sandwich, appetizer and specialty drink and be fully satisfied.
Additionally, there is a loyalty program that will get you a variety of items for free based on how many visits and points.
There's also a $9.99 pho happy hour between 2-5 pm Mo - Fri. You cannot go wrong with that!

Luckily, I was still able to get a solo table thanks to my server, Erica. I was promptly given the menu, and I appreciate the brevity of it. Although I love options, it's good to master dishes to be well loved. I ordered the pho set, and to my pleasant surprise, Erica informed me that there's a grand opening discount applied! I chose a Thai milk tea and summer rolls for my set. While waiting, I noticed the fun playlist of music ranging from K-pop to RnB. Once my food arrived, I believe it was the owner, Matthew, who came to check in. I noticed he and his father went around to check in with all customers. After helping me position my food for a picture, Matthew also returned my summer rolls to the kitchen for a redo when I informed him I didn't taste basil in them (it is a new addition to their recipe). This was a kind gesture that I don't ever remember any other places going the extra mile! The summer rolls with their house made peanut dipping sauce were great but the basil definitely elevated them.
