Being from the Southwest I wanted to give this place a try.... so we decided to pop in and grab a bite to eat around 7:45 pm.
Walked in the door and we were met, not greeted, at the hostess stand by female who seemed less than thrilled that we were there. She took us to a booth in the first area to the left and set our menus down. The place was dead. There were 2 people waiting for to go orders and an older couple who were just wrapping up their supper. Waitress walked up right away with a half basket of chips and like a "sample size" salsa and asked what we wanted to drink. We gave her our order and boom she was gone. No time to ask questions about the menu or anything. She came back with our drinks shortly after and took our order in the same manner as before and left. Short and sweet - and just....void. Based on the reaction from both of the employees we had encountered I immediately went to their site to ensure that we hadn't shown up at closing time....only to see that they were scheduled to be open for another hour and a half.... ???
As we saw our waitress coming I asked my husband to ask for more salsa. Before he could ask She had already dropped off his and my daughter's plate and left. She came back with my plate, warned me that it was warm and started to leave again when we excused ourselves and asked for more salsa and some sour cream.. A head nod and she left. A different employee who had been sweeping the other dining area, brought over the sour cream and salsa we requested. We laughed because the sour cream was in a bowl 2x the size of the salsa sample. Our waitress returned to drop the check and we were out the door before 8:30pm ...feeling weird about inconveniencing them for stopping in.
Eating out is not something we do a lot during the week so it's a treat when we do and part of what makes it special is the experience. We're not expecting parades and red carpet but feeling like we upset someone just for showing up or received rushed service to get us out the door is not what I want to give my hard earn money to.
Next time we are craving Southwestern food with some great hospitality, we'll make the drive down to Adriannas in Franktown or even put up with waiting a little longer at Casa Mariachi than come back here.

I wanted fresh, soulful Mexican food. Instead, I got something that tasted like a $2 microwave dinner put on a plate and wished good luck. The chile rellenos? Baptized in fryer oil so old it deserves a pension. Greasy, flat, and frankly…disgusting.
Service didn’t help. An entire order was forgotten (yep, the whole thing), and when we flagged the food issues, there was zero effort to fix it—no apology, no replacement—just a dead-eyed “Want boxes?” Why would I take home disappointment leftovers?
Our server was basically a rumor. No check-ins, no warmth, no pulse. This is a family-owned spot, but it didn’t feel like family—it felt like mail from the DMV.
The vibe? “Dying business” energy. Tired décor, no pride of place, and the kind of atmosphere that whispers, “We stopped trying.” Parker has plenty of great Mexican options; this just isn’t one of them.
Bottom line: Save your appetite and your cash. Do your homework before you land at this dive.

For my particular taste, these are the best breakfast burritos in town. I don't like when burritos are mostly comprised of large chunks of egg...I have always been a little weird about eggs and their texture and smell. That said, Los Volcanes has a literal mix of scrambled egg and potato, that makes for more of a well-cooked hash brown casserole type texture than either egg or potato individually. I understand this may not appeal to everyone, but that is how I like my burritos. The green chili is not overly flavorful, but it adds salt and flavor to the burrito and is not spicy, so the kids like it. If I were eating a chile relleno though, I would want something with more kick. The bacon tends to be chewy, which is not my favorite, but I very much like the no-meat option, and have recently discovered that chorizo is my favorite. And I always add cheese.
