Last night, we had an exceptional dinner at The Parker Hollow in Parkville, MO. The entire experience was outstanding, and our waiter, Zane, provided fantastic service throughout the evening. Appetizers We started with six West Coast oysters, setting a delicious tone for the meal. We also shared bread and herbed cheese dip. If you’re a cheese lover, this appetizer is a must-try—it’s creamy, smooth, and perfectly herbed without being overpowered. Main Courses For our main courses, I chose the salmon, while she enjoyed the wagyu burger. Both dishes were excellent. The fries that accompanied my burger were absolutely perfect. The salmon was complemented by a flavorful chimichurri sauce and crispy fried spinach, which was so light and paper-thin that it seemed to melt in your mouth. Dessert We ended our meal by sharing the olive oil cake with orange blossom. The portion size was just right, allowing each of us to savor a couple of delicious bites. Portions and Atmosphere The portions at The Parker Hollow were ideal—not so large that you felt overwhelmed, and not so small that you left hungry. Upstairs, the setting was intimate, though I imagine it could become quite lively when full. The main floor features bar seating and an inviting chef’s table. Personal Touch and Final Thoughts Chef Justus added a personal touch to our experience by stopping by to discuss his unique fried spinach and graciously posing for a photo with us in the kitchen. Read moreI have eagerly awaited the opening of another Justus restaurant! We went in opening night for the limited menu, and it was just as wonderful as anticipated. The oysters, hamachi crudo, beet salad, baguette with cheese spread, wagyu burger, and hangar steak were all delicious. Strangely, the cheese spread ended up being the table favorite- how was it so fresh and herbaceous? Salivating thinking of it now.
The location is lovely. We were seated upstairs, and once the evening cooled down, the folding windows were opened, adding even more to the already wonderful ambiance.

Chef Jonathan was the owner of renown Justis Drugstore in Smithville which now occupies the spot where Franks was for years. Parkville is coming alive! Loved the clams in miso broth with gnocchi! The gnocchi were tender and the clams were divine! The yellow and red beet salad was delicious with the watercress and sesame seeds.
