Where do I begin???? Sorry Bistrology, but you're getting 1 star for today's service. My party of 3 arrived at 12:45pm. The lovely hostess gave a 45-minute wait. No worries. We'll chill and enjoy our day off from work. It's Labor Day weekend, rainy, but we're glad Bistrology is finally opened in Pcola as we loved the Destin location. Unfortunately, as with the Destin location, the table management and hosting system at both locations is absolutely ridiculous. To be given a 45-minute wait time, which turned into TWO HOURS(yeah, our bad for waiting but once the hour passed you hope you're next). I saw my life flash before my eyes. Babies who had been carried in, walked out on their own looking like 5 year-olds. My husband became bald with gray hair. Was it still Friday or had it turned into Saturday??The kicker is....the hostess DIDN'T EVEN PUT OUR NAMES DOWN AS THEIR SYSTEM IS NOT WORKING. 🤣🤣 It was like that classic episode of "Seinfeld " where Jerry and the gang kept waiting to be called after seeing group after gruop who arrived AFTER them get tables. I was waiting for them to yell "Cartwright" (Seinfeld fans IYKYK). Finally, we asked the hostess why we weren't being called after our 2 hour wait(she kept saying only 3 people were ahead of us the whole time) but after the 6th awkward eye stare (Yo, where's our table death look) my friend finally approached the hostess stand and they finally fessed up to not even having our names be written down. 🥴😑😡Ridiculous. Hey restaurants of Pensacola, be honest about the wait-time. If it's gonna be 2 hours, then say it's going to be 2 hours. To get on the wait list at 12:45pm, and be told it will be a 45 minute wait, and still not be seated at 2:30pm, while I see a steady stream of people coming in way after us made the whole experience terrible. We spoke to management and she blamed the system for not working, but in actuality, there was no name put down to begin with. It makes me wonder whose name the boss kept looking at over our 2 hour wait. Why isn't there a backup procedure? , Has management heard of paper and a pencil? How about actually writing down customers names if you know they've been waiting for over 2 hours. Maybe offer them a free coffee, or some muffins (Like Another Broken Egg). Things that would make your place better. Have reservations? Not lie to people and say it will be under an hour when you know it'll be almost 3. Im glad Pensacola has a Bistrology as it saves me the drive from Destin as I fell in love with my Pancake Berry melt, but child, I won't be back until the newness of this places dies down. It's rare Pensacola has a cool restaurant that I was excited about, but it's not worth a 2 hour wait- Unless you tell me it's going to be 2 hours. Also, management didn't even flinch or offer to take anything off our meal, didnt offer to comp us, didn't offer a free sweet tea, or biscotti. It was just a shoulder shrug, oh well, too bad, not my fault. I also didn't like how the waitress, who was nice, hovered over me and already had the tip machine on 20%. I could've been a jerk and made her watch me move the button over to "NO TIP" which is what I wanted to do, but my mama raised me better, and it wasn't wait staff's fault, but don't hover over customers and have the button already set to 20% when all you did was press some buttons in your device and refill water once. We tipped 20% but I should've tipped 0% for lousy management's non existent customer service 101. Keep your customers happy or this place will have the same fate as all the other businesses who've taken up shop here over the last 10 years. Do better, Bistrology Management. I get that mistakes happen, but when management acts like they could care less that you just had 3 people wait almost 3 hours( 2 to be seated, 1 hour for food) and not care, or offer to take 10% off the bill, or give us a free soda, mint- something, I feel like Im just a number to you, and not a person. Read moreIt is rare to find a restaurant that remembers the fundamentals of an exceptional dining experience. I break it up into 4 core categories. Atmosphere/environment, service, food quality, and food quantity. In today's economy everyone tries to squeeze the dollar but forgets that investing in the fundamentals produces larger returns.
From the moment you walkthrough the door you are transported. You have entered a travel destination. The decor is intentional and blends with the background music. There is even a second audio track that makes it sound like there are birds in trees. Since you visually see lush greenery on the walls and ceiling, you mentally transition and are no longer in a big city. The staff are uniformed in a professional manner that truly give the feeling that they are there to serve.
The staff is friendly and very professional. Those who speak poorly of the service because of the initial wait time, shame on you. The restaurant is in demand and therefore should not be penalized for that. I rate their service from the moment we were invited to sit. The hostess was pleasant and prepared. Again, it is the small things. The tables were set but she carried extra utensils so that when we sat there was never a question if the table was ready. Throughout our stay I noticed this tactic had paid off with some of the larger parties being sat. We were then greeted by our waitress McKenna. Very pleasant and knowledgeable. She helped guide us through our selections and was able to answer any questions without even a stutter. We splurged a bit to be able to try more and as I made jokes she played along and reminded us that there are "to-go" boxes for that. She was very attentive and made sure we had everything throughout our dining time. We were even greeted by a member of management checking after our food had arrived. When we responded, he truly conveyed how appreciative he was for us dining with them. This place could write a book on how restaurant service should be.
Now to the food. So many restaurants forget that we can taste the freshness in the food. Every bite, I could taste the quality of the ingredients. When this happens you are truly able to taste the vision of the chef and admire the flavor palette that is being presented. For my wife and I's main dishes we chose "Omelet Sancho Panza". Every bite was delicious. The egg was cooked perfect, The ingredients were evenly distributed throughout. And for me, the choice to put manchengo cheese on top really rounded out the plate and made it exceptional. My wife and I also ordered the "Pancakes Churro". I know, hence the joke reference earlier. There are stacks of pancakes and then there are these. Every cake fluffy, cinnamon and sugar evenly distributed in between each cake, and syrup served warm and on the side. Again with the details. Topped with delicious sweetness and hearty granola. Plate presentations were something you normally only get in a five star restaurant.
Quantity of food was large. You truly get what you pay for. Rounding out exceptional quality with generous portions puts this restaurant above most.

Read moreWe have been so excited to try this place as Saturday brunch spots are hard to come by in Pensacola and it did not disappoint. Marlon our server was incredibly friendly and did a fantastic job even with being as slammed as the restaurant was. All the staff were friendly and helpful and checked in even when Marlon couldn’t so we did not at all feel like we were being forgotten. Being Cuban and having lived in Miami for many years this place gives the full perfect south beach Saturday brunch party vibes. The decor and atmosphere is immaculate. The drinks and food options are high end. The menu is extensive and the food was delicious. The Peruvian ceviche was the only thing that was slightly underwhelming as it’s not a true ceviche but for Pensacola it did its job. It came with tostones and ripe avocados and the garlic salt I opted to add on the potatoes was absolutely delicious. My husbands eggs and breakfast was delicious and they don’t skimp on the portions. My husband’s scramble looked like it had 6 eggs in it even though they list it as 4. He eats eggs like it runs through his veins and was too full to finish his plate which was so surprising but we welcomed it cause it reflected the price and was made perfectly. The Cuban coffee was authentic with brown sugar espumita, a sugar coated rim and made to order. All of the cocktails were delicious. We had multiple cocktails and coffees and enjoyed sharing everything. We can’t wait to come back and try other things on the menu. They also list an after brunch party with DJs and a limited food menu from 4pm-8pm that I am hoping to come back with some girlfriends to try and if it gives the vibes the restaurant has set up it should be a great dance spot with delicious cocktails for a true Miami weekend day party out. Pensacola lacks heavily on these types of restaurants and experiences so I am really hopeful this place continues to do well because it did not disappoint. We were able to be seated upon walk in at 7:45 am on a Saturday but by 8:30 the restaurant was packed and by 9am there was a line out the door so be prepared to wait if you aren’t early. The venue is on the smaller side and we are Unsure if they take reservations but everyone was so helpful I’m sure if you came with a big party and wanted to plan ahead they would find a way to accommodate.
