So glad they're open. Seems like the two best restaurants in Pittsfield are next to each other. T & M has a great vibe with a nice staff to make the diners very comfortable. My wife and I have been fortunate to eat great ramen in DC for a couple of decades. This ramen is among the best we've had. But before we had our ramen, a drink was in order. Cannot remember what the name was, but it had rum and maybe punch in the title. We could have easily had more than we did. We then ordered the delicious salad with pickled onions. It was a nice foil to the heavier ramen. My wife had the pork belly ramen with egg and I had the duck ramen. Both were delicious with a broth which had deep complex notes, much like a good wine. Before the broth makes it to the bowl, it cooks for 24 hours. You could taste the process and the low and slow cooking to bring out the boney rich flavor. The pork belly was fork tender and had a deep rich fatty flavor-like the best bacon ever. My duck was cooked perfectly and every component of the bowl was complementary to each of the other ingredients.
Cannot wait to return and look forward to trying a few other choices. So...

I ordered the chicken teriyaki bowl, over rice. Not only was the chicken cold, the teriyaki sauce was so salty that it was inedible. The mushrooms were also too salty to eat, and the pickled onions tasted funky. The chicken satay was room temperature at best; I was too afraid to even taste it because I knew it was not prepared correctly. My partner ordered the ahi tuna bowl. The tuna chunks were large and clunky, but its subpar taste was the only edible thing of the evening. The ginger ale I ordered was so flat, I thought I was drinking a flavored water. And the beer, I canāt even describe the taste. Completely disappointed.
