I need to branch out more often because I've been sleeping on Peruvian food for way too long. Red Fuego is the perfect shop to have right next to BYU campus and it fits right in with the other local classics on its block. It's sporting some excellent college vibes, making it a great place for a date or going out to eat with some friends. It has plenty of seating both indoor and outdoor and they're doing a great job keeping it clean which adds to the aesthetic. Nothing is worse than trying to find a clean table or needing to clean someone else mess and I couldn't find a single thing out of line at Red Fuego.
I ordered some steak and fries while my friend ordered their chicken and sweet potato fries combo. I know everyone in Provo is a french fry critic so I'll start by saying that you won't be disappointed with Red Fuego options. Their fries aren't out to break records and probably won't be the reason you come back, but I think anyone would be pretty satisfied with both the quality and quantity of fries on their plate.
The real reason you come to Red Fuego is their quality meat. I can only speak to the carne asada on my plate and it was absolutely delicious. It was paired well with a variety of veggies and seasoning and after trying it I don't think I would be happy with their chicken options, the steak was just too good!

The chicken can be hit or miss as sometimes it’s raw, every time I’ve had this problem they do fix it but it sucks when that’s what you wanted to eat. This is my go to location only because I live close to it. I’ve been coming here for 3 years, and the inconsistency of this place drives me crazy sometimes. They never really open at 11. The wait times are super long, I usually call ahead and even then sometimes I wait 10-25 minutes for my food. There is also days all they have is chicken I could not tell you the best time to go because they’re is always something going on. Still this is my favorite Peruvian restaurant despite the inconsistency. I hope in the future they’ll be able to fix this. Sure it's, seasoned differently than anything you'd had before and it isn't dry. The flavor is just garbage. A travesty to call it pollo a la brasa.
To top it off: Tiny serving, a joke of a 1/4 chicken. Imagine a leg that's smaller than the plastic fork. I thought I got one big thigh. Nope this chicken had wing sized legs.
I got rice and potatoes. Rice was inedible. Funky and soft. Probably their cheapest sides to purchase themselves - still it's $12 freaking dollars. I didn't even finish eating the chicken because I was let down so hard being sold chicken under a false name.
