Squawk Coffee is a hidden gem of the coffee bean here in Pueblo. A little off the beaten path of Starbucks and the Daily Grind*, Squawk Coffee offers a new aromatherapy for the caffeine seeker. With a cozy interior and a loft for reservation the building offers a pleasant atmosphere. The space opens up dramatically when the weather warms up as the outside court is very inviting. In the early morning I hear there are yoga meet ups during the spring and summer. And interesting factoid: the history of a coffee shop in this building is extensive. The most recent owners have been using the same bean roaster for about 14 years! It is called Keva bean company. They air roast the beans instead of using the commonplace metal roasting technique. This reduces char taste and creates an equal roast over each batch!

Also, Starbucks always gives 2 tea bags (I had a London Fog), but this place gives you just one. Very little flavor. The staff are friendly, and I would return (if only to chill), but forget it if you need to focus on anything. Note the picture of my attempt to đŸš« out sound from the speaker, lol.

Start of with MUSIC TOO LOUD. Food and coffee great, fresh and gals behind counter nice and accommodating. I didn't want to mess up their ratings so I still gave 5 stars but the last time (first time I was here) I came with a friend and we sat upstairs and had to yell at each other to talk and finally just ate without conversing because we needed to be obnoxiously loud to hear each other over the music. My friend came downstairs and asked for music to be lowered.... which they did. So I decided to try it again by myself today. Food again great but I can't hear myself think. I am hearing people upstairs speaking loudly so they can hear each other but all it sounds like to me is shouting. I realize gals behind counter do not realize how loud the music is because the speakers are in the Cafe part NOT behind the counter. Both times I've been here it's been lunch time and only a few people are inside so I may suggest it's not the food, coffee, atmosphere is comfortable and tasteful but nobody wants to struggle to have a conversation. I didn't bring it up again because I didn't want to be a pest.... I'm only 54 years old. I don't hate the music choice just the volume. It's bar/nightclub level, not relaxing Cafe vibe. I only post this to help..... not discourage anyone. A few decibels may make a huge difference in...

I am often in the area for appts and I decided to go in yesterday and grab a bite to eat with my mother, we shared the 3 cheese grilled cheese with bacon , this was by far the best grilled cheese I’ve ever had! I absolutely love the cherry tomatoes that comes along with it on the side, genius idea, it’s so refreshing. I absolutely feel inlove with this place, the vibe, the aesthetic, and to top it all off we were met with the absolute most genuine welcoming hello right when we walked in. If you’re not a coffee drinker, try a smoothie they are delicious or sit and have a sandwich which I highly recommend or even just go in and enjoy the calming atmosphere. The owner is truly a sweet soul, I’ll return even if I’m not hungry or in the mood for coffee 
 sometimes what makes or breaks it with me isn’t always necessarily how amazing the food is, it’s about how amazing the person behind the counter is and this cafe owner that I had the pleasure of meeting and chatting with today when I returned to grab another sandwich 😁 has a beautiful soul and I look forward to returning and trying more sandwich’s! When I read other reviews regarding vegan options here, I was looking forward to some really good vegan food. The breakfast menu all contained meat and cheese except for oatmeal and peanut butter. When I asked about vegan options, I was told that the meat could be removed. I don't think most restaurants understand that vegan means no animal products, which includes not only meat but dairy, like milk products and cheese. They do however have non-dairy milk selections. But all of them contain sugar. I ordered oatmeal with fruit and nuts and it turned out to be instant oatmeal with nuts and dried cranberries. Not exactly what I was expecting. I also ordered a sprouted grain English muffin, but there were no vegan spreads available. I did enjoy the brewed coffee, which was a medium dark blend. The total for 8 oz coffee, a small portion of oatmeal with dried fruit and nuts, and a water was around $10. The service was great, and the restaurant and bathroom was very clean. I couldn't see the lunch menu because it was turned around, but I will come back just to see if there is at least one vegan option to choose from...
