This was my first time here and when my wife and I first arrived the ambiance is very nice. We ordered the Thai pie and ricotta whith jam toast. The toast came out in a timely manner but the bread was under cooked ( doughy). The pizza followed about 15 minutes later. We got our pizza after the people behind us got both of theirs. They called my wife's name and she picked up the pizza, we were sitting directly in front of where you pick up your orders. She sat down and noticed there was no cilantro on the pizza. She took it back to the counter to inform the gentleman making the pizzas and his response was "you took it to quickly". She informed the gentleman that he called her name and she picked up the pizza. He then went on to say "we put the cold ingredients on in front of the customer ". First of all, rude, you called her name telling us the pizza was done. After he applied the "cold ingredients " she sat back down and we both grabbed a slice. We both noticed the pizza had no chicken on it. My wife took the Pizza back up to the counter to inform them there was no chicken, and the gentleman told her the chicken was under the cheese. Unless they were using very finely ground chicken, there was no chicken on the pizza. A second gentleman said, rudely, "we will just remake it". When we got the newly made pizza, we found hair in the pizza. I respect my wife enough not to make a scene in a restaurant. This will be the first and only time I will go to this place. My wife does not need to be spoken to the way they spoke to her, nore should a restaurant get upset at a customer when they messed up. This place has poor...

Bricks and Birch is one of my favorite restaurants in the entire Inland Empire! All of the food they offer - pizza, salads, pastries, coffee - are all delicious and use high quality ingredients.

The pizzas are all wood-fired in a brick oven and have a perfectly crispy yet still chewy crust. I usually order 1 pizza and 1 pastry to split between me and another person and the total comes out to around $20. You can even order half-half pizzas but they'll charge at the price of the more expensive pizza. Some of my favorite pizzas are:

-Mushroom brie: sooooo good but I'm probably biased because I love mushrooms & brie. -Rocket man: comes with prosciutto, arugula, burrata, and pine nuts. It's a great choice and you can't go wrong with this one. -Thai pie: a unique pizza that tastes kind of like pad thai on a pizza. Even though it has both sweet chili & peanut sauces, they weren't overpowering.

Their pastries are also really good and I really like their cheesecakes.

For their coffee, they actually use Stumptown coffee beans. Stumptown isn't a local roaster, but it's still a high quality one. I've had a lot of coffee both here and at Augie's close by, and I actually think they're comparable. Interesting fact about me: the first cappuccino I had here was so good that I started getting into espresso and even purchased an espresso machine.

Several problems: They cook ONE pizza at a time. A family of 3 to 4 can not eat one pizza even two with out still being hungry, becuz it's not big enough. And for nearly 20$ a pizza a family of 3 to 4 ur looking at 60$ not including drinks. My son is 11 years old slender kid and he eats an entire pizza that size to himself. So if money isn't an issue, don't expect to eat with your family at the same time since they cook one by one. There was about 5 customers in there, it took way to long. There's no way this place can cater to a full house or a rush hour doing one pizza at a time. First pizza was burned btw. Had we known they were doing one pizza at a time we would have asked them to bake my daughters pizza first as she is type one diabetic, she took her insulin and has a 15 minute window to get carbs into her system. That didn't happen so her blood sugar shot down which is never good. We explained it to the cooks if they could please just get her pizza done first instead then continued to cook other pizzas. It was terrible. Best thing was the 6$ beer I got. I wish nothing but success in the future these reviews are needed so that establishments can tweak they way they run things....

The best pizza place in Redlands, HANDS DOWN! Easy to park, easy to find, amazing to eat. We got the thai pizza and some soda which is pretty commonplace usually for california style gourmet pizza. I have never had a thai pizza this delicious in my life! Plenty of sauce and ingredients/topping spread out evenly giving me deliciousness in every single bite! Ny pizza maker was Natalie, she helped me decide which pizza to order as there were so many great choices. Let me tell yya, she delivered on the flavor and quality on this pie. Cant wait to eat more pizza here.

The best pizza place in Redlands, HANDS DOWN! Easy to park, easy to find, amazing to eat. We got the thai pizza and some soda which is pretty commonplace usually for california style gourmet pizza. I have never had a thai pizza this delicious in my life! Plenty of sauce and ingredients/topping spread out evenly giving me deliciousness in every single bite! Ny pizza maker was Natalie, she helped me decide which pizza to order as there were so many great choices. Let me tell yya, she delivered on the flavor and quality on this pie. Cant wait to eat more pizza here.
