Backdraft BBQ has officially reopened Thursday through Saturday, starting at 11 AM and staying open until the food runs out, a perfect “get there early” kind of place. If you’re in Roswell and love BBQ, this spot is absolutely my favorite in the state, maybe beyond.
From the moment I walked in, I could tell this place is special. Paul, the owner, is warm and clearly passionate about what he’s building. He has plans to upgrade parts of the space and host events, definitely someone who cares about the experience, not just the food.
The atmosphere is fantastic. It is fireman themed (Paul’s background), very rustic, very genuine, and super welcoming. The interior feels like part BBQ joint, part community hangout, and you can tell they put thought into the environment.
And the food backs it all up. The BBQ is outstanding. Their sauces and queso are excellent. Brisket nachos are a top tier appetizer. I tried the HazMat sandwich today and it was pulled pork piled high and smothered in their special queso dip. Moist, satisfying, with just the right breading. The portion sizes were generous.
Service was attentive and friendly. Staff made me feel right at home. Prices felt very fair for the quality and the atmosphere.

The pit crew welcomed us as we walked in and the waitress was super helpful and quick with service. But let's talk about the food!! I ordered a combo plate with brisket, ribs, coleslaw and green chili corn. Oh man. The brisket was incredible. Tender, moist and full of flavor!! And the ribs just slid of the bone with no effort at all. The smoke flavor was phenomenal. No BBQ sauce needed. In fact this spot hit harder than most the bbq places I've been to in Texas!! Even the side dishes were on point. Country style coleslaw complete with dried cranberries. And that green chili cream corn was on fire!! Had that NM flare I was hoping for!! It was a Friday night when we visited and not too many people were there. I was a little worried that the bbq wouldn't be on point since business was slow, but I was sooo wrong. Talking to the waitress I found out that this bbq spot opened in 2020. Right before the pandemic hit full force. Arguably the worst time to open a restaurant in recent history. The vibes you get as you walk in are friendly and welcoming and wait staff was really helpful, friendly and most importantly attentive to our needs, but the real treat was in the wonderful smokey flavors of the pecan wood they use to smoke their meats with. The Jalapeño poppers and brisket nachos appetizer were a fantastic start to our meal and then we were treated to some seriously good BBQ. Our brisket plate was truly amazing, so tender and juicy with just the subtle flavors of the pecan smoke. The Hazmat pulled pork sandwich was delicious, on soft sweet delicious roll. The baked beans were most excellent and some of the best we have had. The coconut tea was unexpectedly delicious and the green chili apple pie was extraordinary!
