This place is just as bad, if not worse, than the other commenters would have you believe.
Not only will the salad taste like chemicals, but the rest of the food most likely will as well, since the kitchen staff sprays chemicals with reckless abandon. If the food is even fresh, that is...they routinely save food made the previous night and re-use it the next day (especially the mashed potatoes and macaroni and cheese). The dining area is constantly dirty because the trays, plates, silverware, and cups are only reluctantly taken from their tables to the dishwashing area. The bathrooms are always filthy because the floor staff refuses to clean them and delegates the responsibility to the kitchen staff, who hardly ever venture near there, let alone work within spitting distance. The store is run by penny-pinching racists (if you think I'm kidding, look at the pictures hanging on the walls) who will hire-and-fire anyone who works there who isn't Caucasian or Hispanic and treat them like second-class citizens. Don't use 2 or 3 syllable words when speaking to the holier-than-thou chicanos who work there or you'll be met with a confused and angry look, almost as if you had offended them by speaking proper English in their presence. Don't ever send your food back and expect a proper replacement because they won't re-make your food to your standards; they might bring you back food that doesn't taste like bleach, but it'll be cold. The kitchen staff is ignorant enough that they attempted to debate with me on how weights and measurements work and became indignant when I told them I knew how to use a scale to weigh ingredients. The corporate office suits will occasionally stop by in order to silently judge everyone and ignore any and all interaction made by anyone who isn't a manager (unless, of course, you're a customer, in which case they'll give you their best fake smile and sincerity). They treat their new employees like slaves, pay them just as much, and will respond with hostility to any complaint made.
I know all of this because I used to work here. Don't ever eat or work here, don't let your friends eat or work here, and don't let your acquaintances eat...

You might consider my affinity of the same origin as my undying love of public school cafeteria Mexican food. Those enchilada Wednesdays will forever make me salivate at their mention. Speaking of which the enchiladas that Luby's serves are as close to a dead ringer for those schooldays enchilada plate as I have come to experience.
Now with that serving of peculiarly rectangular fish one must have the mac'n cheese plus green beans for the full meal deal. The generous application of their tartar sauce is absolutely de rigueur in completing the gastronomic transcendency of the fried fish experience.
One last additional plate completing requirement is a jalapeno corn bread muffin. They are by no means a candidate for blue ribbon bake-off, but for me it's as commanded as chips and salsa are for a precursor to a Mexican restaurant meal.
There you have it whether it floats you boat or capsizes your sloop, I will keep going to Luby's until the fried fish plate is no more. Not having been as of late I heard an unpalatable rumor that they now serve you two Lu'anns instead of one whole fish plank. Say...
