What interested me in Trilogy (aside from the positive reviews) was the deep dish pizza. If you think New York-style pizza is hard to come by in this city, you can forget about Chicago deep dish. Just offering a take on the dish is good enough to earn Trilogy some brownie points. Feeling adventurous, I tried a small deep dish mushroom and sausage, along with a small New York pepperoni and garlic.
I wasn't a big fan of the New York. The crust was uniformly thin - about 1/4" - and was topped with pure mozzarella, pepperoni, and so much of an oregano garnish that it almost should have counted as another topping. Everything was good enough on paper, but it's now quite in that authentic New York style you might find at Central Park or Florio's. I do caveat this with a reiteration that I ordered a small, which isn't always representative of a larger pizza, crust-wise. The toppings should all be the same, though.
I liked the deep dish better, possibly helped by there not being too much of a benchmark in the city. A hefty amount of sauce, cheese, fresh mushrooms, and sausage were satisfying, helped by the slightly sweet sauce which was given more opportunity to shine through on this offering. The crust wasn't the crispiest, but when you're basically making a casserole, the virtue of being able to pick up a slice without it falling apart is accomplishment enough.
Authenticity aside, Trilogy is home to a host of gourmet ingredients and cheeses, so there is plenty of room for innovation with respect to your pies. Between this and the deep dish, it's enough to keep me...

I can honestly say the stuffed mushrooms were less than sub par and probably the worst $8 I've spent on any appetizer I've ever ordered. I got six total mushrooms of which four were smaller than a quarter. Because they were so shriveled up tells me they were over cooked. I wish I could attach a pic so you could feel my pain and know my frustration. Now for the pizza. I ordered to go and was told it would be ready in 30 mins. As always when I order to go I like to get there early and just wait. I showed up 15 mins early expecting to pay and wait for a bit. To my suprise, my food was already waiting for me so that tells me the person taking phone orders doesn't know how long pizzas take to cook. Long story short, my pizza wasn't even warm when I got home so I could only imagine what it would have tasted like had I waited the time told to me. Ā Ā Ā Read moreThis was our second visit to Trilogy, and it definitely won't be our last. I was feeling under the weather on Valentine's Day, so we postponed our celebration until Saturday night. We thought this place would make the perfect "date night" spot. We weren't wrong.
It's a good thing hubby and I like to eat dinner early, as the place was already packed at 5:30pm. The same waitress we had when we went for the lunch buffet the previous month, greeted us when we arrived. She actually remembered us! Fortunately, we found a tall table back in the corner. Great spot!
We both ordered a glass of wine while we waited for our pizzas. You can actually watch the owner tossing the dough for each order! While we were waiting, we noticed the huge number of carry out orders. This place is popping on a Saturday night!
When our pizzas arrived, we weren't disappointed. Hubby ordered the Quatro Forni without cheese on the New York style crust. I had a pepperoni, mushrooms, and black olives, also on the New York style crust. Both were amazing! The crust was thin and crispy with the slightest amount a char from the brick oven.
