Hank's is consistently good. It is also consistently at least a 20 minute wait for a table if you choose to go on a weekend.
The food is on point. Each menu item is cooked to order, and is cooked right. Not cold, not burned, and full of flavor. I frequently get the biscuits and gravy with Scrambled Eggs. I don't think there is any sausage in the gravy, but I suppose that isn't a requirement. The bacon I get on the side hits the spot. Last time I was there, the coffee tasted burned. That's OK, I don't drink coffee for the flavor - if I did, I'd be at Starbucks ordering a frappuccino deluxe pumpkin spice basic beverage with soy no coffee on the rocks. So the flavor of the coffee woke me up, not the caffeine content. Nice.
The service is always great here. The group I go with is partial to the owners, they've known the family for a long time, and have been coming here since the doors opened. That's why I get to wait for a table instead of going somewhere else.
Enough Rambling.
The service - everything is efficient. They quickly shift over to a waiting list for tables, provide a good estimate of how long the wait will be, and go outside to call your name, or oftentimes they just come up to you and tell you the table is ready. Drink orders are taken, and when they are dropped off, food orders are taken. The food arrived at the same time, so there was no awkward hangry waiting for someone to get their flapjacks.
Hank's is a good place to visit. It was featured on Diners, Drive-Ins, and Dives - which means in a small-ish town like Santa Rosa, means it is busy busy. I'd only make it my go-to as a Monday - Friday breakfast spot. Certainly not on...

We ordered the biscuits with gravy & one hot cake and bacon. The biscuits and gravy were not something you would write home to mother about. It could have been seasoned better and presented in a more appealing way. The bacon saved me. Cooked to perfection.
The problem child of this breakfast was the huevos rancheros. We had the huevos but where was the ranchero. Issue number one the corn tortillas were not fried and appear to be just out the package and laid down. Issue number two..the beans were not charro beans they looked like unseasoned canned pinto beans. Issue number three the salsa was not giving what it was supposed to be given no flavor no seasoning no nothing. Then lastly the ice cream scoop of sour cream destroying it all.
We requested to have the meal replaced and was met with attitude about why we sent it back and politely we stated “there is no seasoning”.
