My partner and I had a great time at Fuji. We were surprised that it was a little more casual than we initially thought. However this was a welcome surprise as we were looking to eat somewhere that felt a tad upscale without the oppressiveness of those higher end places. Fuji nails that feeling of 'we need a date night that's memorable, affordable and scratches that itch of dressing up just fancy enough to make you forget that you only make $45k a year while living in Seattle.' The atmosphere was relaxed and friendly, the table next to us seemed to be having a great time too!

We ordered the Calamari as an appetizer. It was absolutely the correct choice in our opinion. It was the perfect texture, no rubberiness or 'chew for two minutes to choke it down.' Just delicious, hot, fried calamari paired with your average sauce. Also ordered was the salmon nigiri. It melted in our mouths the way you hope salmon will. The smallest amount of wasabi and a tiny dip in soy sauce really completed the whole thing.

5 rolls were ordered by us, I think much to the surprise of the staff who wished us luck as we embarked on the possibly stomach popping venture. I'll list what we ordered, most to least favorite between my partner and I:

Snow-mageddon (this roll had EVERY right to cost what it did. It was delicious and if I was told to choose between my dog and another one of these rolls, I'd have to wish fido good luck with his new owners as I sadly waved goodbye before enjoying my snow-mageddon roll.

Paradise (Sweet mango that was as refreshing as it was delicious. Not much to say here, just a solid choice in general for sushi lovers and people that might be intimidated by sushi. If you don't love the taste of fish and your partner dragged you out anyway, this roll is a safe bet for you.)

Godzilla (scallops were great, the sauce was delicious. Also, I don't know if it was just the way the way the veggies were cut or what, but the texture was incredibly satisfying. Creamy, with the most satisfying crunch.)

Ultimate Dragon (I love Unagi, usually it's paired with a soy glaze in other restaurants that's really strong, but Fujis was gentle enough to get that taste of Unagi to really come through. This roll was a perfect balance between salty and sweet.)

Heartbreaker (I didn't think it was particularly flavorful. However, that wasn't a negative for us. Not all food is meant to overwhelm your tastebuds. What really I enjoyed about this one was how 'clean' it tasted. Sometimes sweet and simple really is what's best.)

Staff were courteous and kind and even joked with us about the amount of food ordered, which was fun. All in all a great experience. We look forward to...

We came by here for my niece's 21st birthday. We made the reservation on their website for a party of 5. I called the restaurant before arrival and asked for a birthday cake at the end. They said sure. Upon arrival, we were seated immediately. We ordered the Calamari, Chicken Karage, Uni Shooters, Spicy Sunset Roll, Large Sashimi, a variety of Nigiri (Maguro, Chu-Toro, Otoro, and Hotate), Korean Short Ribs, and Bibimbap. For drinks, we ordered Lychee Kisses, Cherry Blossom, Shots of Titos, and Sapporo. We also ordered chicken teriyaki and Long Island, but they forgot those. Majority of the food were fair or good, and the Otoro was one of the best I ever had. The Calamari and Chicken Karage were tasty starters. We disliked the Uni Shooters. We asked our waitress for drinks recommendation, and she had another waiter come over to help us because she was not familiar with mixed drinks. The guy that came over was passive-agressive. He was smiling, but you hear agitation and anger in his voice. We asked for drinks recommendation, and instead of having a friendly conversation about what we may like, he said I can not recommend anything because I do not know what you normally drink. Then he completely paused and stared at us. Awkwardly, we asked for a Long Island. The Long Island never came. Anywhere else, they would ask what liquor base do you like? Strong or mellow? Sweetness? Nothing. We needed our waitress to order more food, and the same guy was near, so we asked him to get our waitress. He rolled his eyes and said I will help you, she does not know anything. The same disingenuous smile and angry face. He had the attitude with some other customers too. Overall, this would be a place I would return, but because of that waiter, I will not return to Fuji Sushi. I wish I knew his name. He definitely ruined the mood for our celebration. This guy was behind the drink bar most of the time, 5'3, heavy set, ginger facial hair and bald. I give this place a 4-star for the food, other waiters/waitress, and the complimentary birthday cake at the end. I removed two stars for that waiter. I will let others know about...

Fuji Sushi Good food, fresh ingredients even for their non-sushi items. Now that I know they have parking available at the Diamond lot at 6th and S Washington Street, I will likely come back on another visit into Seattle. My son is visiting from Wisconsin and wanted to have sushi while he was here. Found this place on Yelp and was not disappointed. Tried 3 rolls and split them between us. The Blushing Geisha (our favorite of the night), Godzilla roll, Ultimate Dragon roll. Good thing we were hungry, both of us were quite stuffed. My wife and my son's GF are both non-sushi eaters. Wife had the chicken Yakisoba and she liked it and let me have a bite, it was very tasty. GF had a bento box with Chicken and shortribs and all the sides. When they brought it out we asked jokingly "how many people is that for?" She said "me. I can eat that." Which was amusing because she's a small woman. Impressively she did finish a little more than half and take the rest home. On-line my wife noticed the green tea tiramisu and wanted to try it and ordered one for the table. The menu doesn't disclose that it's frozen and it made it difficult to share and eat. When asked, the waiter admitted its difficult to thaw it, without melting it, and offered to take it off the bill. Everything else was great and we did not make him do that. Should also mention the featured cocktails. Had their version of an old fashioned, featuring Suntory whiskey. Which is a Japanese whiskey I like enough to keep around for when company is over. Excellent libation. Also the guy at the next table ordered the Volcano Lobster roll that they bring out flaming. Have to admit was a little jealous when I saw that. Looked impressive and smelled good. Have to come back and try...

Food quality was average at best. Expensive for the quality that we got. They kept the water filled in our cups so that was nice. Ordered two pieces of chu-toro ($16) and o-toro sushi ($20) and it was lacking in rich fatty flavor from the blue fin tuna that I had in Japan. Soft shell crab was good. It was crunchy and seasoned with dipping sauce that was slightly sweet. Tako Yaki (deep fried octopus balls with bonito flakes) was alright, but the texture and flavors were not comparable to what I had in Japan. It has spicy mayo drizzled over that I wasn't a fan of. Kyoto roll was a strange combination of flavors. Cilantro and yuzu came out strong and snow crab wasn't that flavorful. Interesting if you want to try that fusion of flavors. Beef sukiyaki ($20) was poor overall. The beef was overcooked, stuck together in clumps and tough to chew. The chrysanthemum greens were interesting, but unexpected from what I had before. Two sides came with the rice and one of them looked like some kind of potato or yam, but it didn't seem like either after biting into it (not starchy). It was really sweet though. Burdock roots were alright. Hope other items on the menu are better.
