Pho ba is considerably homely and comforting. I should have written a review long ago so I include this review now and I share it with you.
I find that years after years the restaurant keeps itself attuned to it's strengths:
Humble Service~ There's a simple charm here where the staff cares not to impress but to imprint their charms upon those that walk in.
Broth The subtle meets the timeless quality of their broth and the rock candy is not skimped and neither the salutations or serene smiles of the hardworking ladies that grace this stall A more than worthy glimpse into love, a gem or...just a touch and it's steps west of little Saigon.
Vietnamese food production is expensive, it takes real time and so it's a rugged business and a great experience if supported by local and loyal clients.
Too unhidden but remarkable is it's bones and broth. Both are intricate and this hidden recipe is here only, a family patent and that matters. As business relationships changed this place from Pho Bac to Pho Ba they kept their tastes and formulas. You'll notice the tastes are better than most to all in the pho especially.
Value~ One dollar more for a large than a small bowl of pho speaks irony and a chin up's bitterness to keep generosity forefront. lol... they have passive egos and confidence.
Too: Get their Bahn Mi or order it delivery. The Chicken ban was incredible and a perfect balance in every way, each bite a thought....miles away from District 11 but so close in infamous flavours and fashions.
The jalapeno kicked my ass and I deserved it, it was great and wonderful with the marinated chicken in some kind of mushroom powder gravy is what I'm guessing made the sandwich OUTSTANDING!
The cut of the carrot, the dark green sprigs of parsley toils beautifully and tells of's shopping in mornings, perhaps pulled out of root too, in the morning...the texture of the fresh cucumber, the uniform cubes of chicken 👉 in all precisions and values the perfect performances of Michelin avant's culinary regards. So, pay attention to the sound and pull of your Bahn and the play is geography and the graph dances to it's perfectionists in the back.

"See you tomorrow" a coined goodbye that gets a laugh has been the salutation as you pay and that's because the hips in it's walk, the Pho Ba confidence comes across in it's subliminal elegance and this place has passion.
You will compare it to others and this spot with the modest and the grins always places high or wins.
Grace always wins.
"This is one of my favorite places in the world" I added as one of the ladies apologized for being so long. "I could stare out this green door for the rest of my life" ... it's a picturesque scene to suit myself anyway.

My reaction echos that of others... WOW!
I'm a huge fan of South and/or East Asian soups, and have eaten tons of them from London to LA, and this is easily the best pho bo noodle soup I can remember eating.
The broth was a medium brown and almost crystal clear. It was well balanced; an initial slight hit of sweet and then savoury delicious fat drawn out to a very slight hint of sour for a finish, with an earthy beef backbone through the whole bowl. Just enough lip smacking fat to lightly coat your tongue. Broth-wise, I would prefer a bit more aromatics for the nose, to enhance the taste when I'm almost face down in the bowl. *disclaimer: I added some Thai basil, 1/8 of a lime, and a nice dollop of the chilli oil - pepper flakes and all.
I could see a minority of people wanting/complaining for more meat, but I think most people will be happy with what's typically given. And hey, pho soup isn't meant to be a prominent meat dish anyways.
The pho noodles were near perfect as well. They were the vermicelli type, but not so fine they clumped together and become a thick long gob to chew through. Each noodle carried itself and provided texture to each mouthful. They were perfectly cooked, just al dente enough, and maintained their consistency for the short time they were in the hot broth.

Read moreI arrived at Pho Ba very early in the morning on Christmas eve for breakfast. Based on what I could tell they took cards. But once I reached the door and saw the cash only sign I had to leave and find an ATM. I had already purchased my parking sticker so I was a in a bit of a hurry.
I returned, found parking and went inside. I sat down and ordered the veggie pho. The place was freezing! I mean it wasn't even remotely warm. They served some hot tea which helped. Then I waited...
Twenty minutes passed before I received my pho. I don't think I've ever waited that long for pho and I was cold, hungry impatient and stressing my parking sticker just a bit. But then I took a bite and ahhhhhh, all my troubles faded away. So delicious was the pho that I scarfed it down like an ex-con. Shameless and messy, pho broth everywhere.
Three minutes before my parking ticket was to expire I sprang up from my chair and called out to the kitchen: "I need to pay!" The woman who prepared my delicious breakfast greeted me kindly asking if I had to return to work which I did. I paid and left feeling extremely satisfied only wishing I had more time to savor the last bits of what was left in my bowl.
The rest of the day I was dehydrated af and drank water like it was going out of style! Definitely from the pho, maybe msg but def lots of sodium. Next time I will go prepared with cash, extra time on my parking sticker and a gallon of water waiting for me in my car.
