I tried to get in at Texas Roadhouse on a Sunday evening, it was packed and so full I couldn't even get a seat at the bar...so I came here, to Colton's. The bar was empty, restaurant was only about 1/2 to 3/4 full. After I got my steak, I realized why. I asked for medium-rare, as you can see by the picture, it was medium-well. I did tell the bartender about it, but did not send it back because I didn't want to wait another 30-40 minutes for another steak. I ate half and took the other half home for my dog. To Colton's management, if you want to be busy and packed like Texas Roadhouse, then you need to find a cook that knows how to cook a steak, especially since you call yourself a "steakhouse". I will probably not return and would not recommend it, unless you like your steak charred and overcooked.

The Daughter Unit wanted steak and peanuts, so we hit Colton's for lunch. First and foremost, the staffing level was the best I've seen since Covid invaded. Management must be treating their folks right. Service was great, but we did have 1 issue... my steak was perfect (pictured) but my daughter's steak and 1/4 of the wife's tips were severely undercooked. I traded with the daughter and the wife ate most of her tips. I spoke to a manager and he offered to take them back, but we just ate what we had. The flavor was good and I didn't mind the Medium Rare steak. Management made it up on the ticket, which I appreciated. Easy to see why the staff seems pretty happy.

Food and service was amazing. This is the third time we have eaten here, and it has been consistently excellent evey time. When you order a steak, you expect it to be cooked to order, and evey time, it has met or beaten expectations. The blackened salmon is also prepared good and tastes excellent. Not many places know how to properly cook salmon, and then even fewer know how to cook it blackened. Here, it was mastered for both to make for a great dinner. Noah, our server, was attentive and charming with his expertise, especially on wine choice, helping find the right merlot to accompany the blackened salmon.
