juliette was our first step in a fabulous culinary journey this weekend. We ate both lunch and dinner here. Lunch in the bar; quiet and relaxing at this time of day. Dinner on the amazing patio, a completely different vibe, after an event, full of energy and a cool Taos vibe. I would highly recommend the smoked trout with black radishes (pictured), the flavors were incredible. We tried a wide variety of the dishes and you can’t go wrong. The flavors lean towards delicate, highlighting the freshness and in-season nature of the elements that make up each dish. Whether you’re looking for a place to join friends for a cocktail or a more elevated dining experience, juliette is your destination. Kudos to Hotel Willa, for bringing this hotel, bar, and restaurant experience to Taos.

We came for a drink at the bar and ended up staying for the whole night. The cocktails? Unreal. The bartender handed me something mezcal-based and I genuinely blacked out from joy… not the alcohol! Vibe-wise, this place is effortlessly top-tier, like the kind of spot you'd expect in LA, not tucked into Taos. Everything on the menu was organic and insanely fresh AND you can actually taste the quality. The wine at dinner was lights out. But the real headliner? The pistachio ice cream. I took one bite, dropped my spoon, and genuinely had to sit in silence for a second. Best dessert I’ve ever had. No exaggeration. My friend tried to steal a bite, and I nearly slapped his hand like a toddler. Easily the best restaurant in Taos.

I made a reservation in advance and the reservation asked if we have any allergies. I put allergy to all dairy (which was an option). We got there on time and were seated. The waitress ignored us for 15 minutes and then told us if no one came she would come back. Another 15 minutes before she came back and took our drinks order. We were ready to order food and I let her know that I have a dairy allergy. She responded with everything here has butter. I asked if the chicken could be made without butter. She went to the kitchen and came back and said No. I asked her what could I have. Her response "do you have epi pen level allergy." Seriously! Then she said she will have to have someone come talk to me. And she will not put in our drinks order in case they could not accommodate me. We waited for another 15 minutes. No one came. So we told her we're leaving. She just nodded and turned away. Not the worst possible service I have had, but it was close. Rude, unpleasant, and completely not helpful. Not coming back. To anyone with allergies, please know that they will not...

We had a really lovely meal at juliette. We had the NA cocktail, a carajillo, the smashed avocado, the sheet bread, and the dumplings.

Cocktails: Both were fantastic. Very well made and competitively priced for their quality.

Sheet bread: Incredible focaccia and delicious butter. I would have maybe loved a little side of flaked sea salt, but I also didn't ask. :)

Smashed Avocado: Absolutely fantastic. So much flavor for such simplicity. They really knocked it out of the park with this dish.

Dumplings: We weren't sure what to think when ordering, so we just took a chance. Really nice dish -- soft dumplings with strong parm flavors. The mushrooms added a nice earthiness and the turnips provided some great freshness to the heavier parts of the dish. Inventive, fun, and well executed. Glad we took the chance!

The setting was really nice too -- very clean and modern, but still comfortable. We'll be back, next time...

I’ve been to Juliette twice now. First time for the gallery opening, which was a smashing success. The bar and restaurant were open. Tried their margarita and an espresso martini. Both excellent! Retuned the next week for dinner. Currently the menu and seating is limited with the full restaurant and an expanded menu coming June 1. My dining companion and I shared their avocado dish, the cheese dumplings with oyster mushrooms and their ‘lettuces’ salad. All were excellent. The cheese dumplings were delicious with a savory depth added by the oyster mushrooms. The lettuces were fresh with a bright and tasty dressing topped with abundant grated Parmesan. We also had their pistachio ice cream. Best I ever had. Service was attentive, friendly and professional. Pricing seemed very fair. Vibe of the place is sensational so far ( only in their first month)....
